It was a cold day. Okay, it was freezing cold. The older three kids had gone back to school after two weeks off for Christmas break. Our youngest, Caleb, needed some mom attention because he was swallowed up by the older ones for two weeks. You know what I mean. Older three home vs only child for 7 hours.
He desperately needed some mom time. Mom time usually means baking. Baking today means a new gooey butter cake recipe.
What makes butter cake gooey
This butter cake is made with cream cheese and a stick of butter, therefore, the name gooey butter cake is appropriate. The top layer is soft and where the cream cheese lies. The bottom layer has the butter and cake mix.
There are so many different varieties of gooey butter cake and it is made famous in St. Louis. I enjoy being creative with the basic butter cake recipe and adding my own flair such as: Gooey Strawberry Cookies or Gooey Red Velvet Bars.
Smashing the OREO cookies
My newest creation: Add OREOS to the cake mix. And it was so.very.good. Times 10.
So he may need a lesson in Chocolate Chip spreading
The bottom of the cake is a chocolate cake mix instead of the usual yellow cake mix and the top is OREO cookies with cream cheese. You use the same basic idea for this cake as well. You don't need flour or white sugar because of the cake mix so the ingredients are simple and basic.
The cake is soft and delicious. Flavorful and chocolate-y. There aren't many ingredients and you can have it in the oven quickly. Then you can eat it. Gotta love that.
