Delicious and easy gooey butter cake!

When it is cold out, turn on the oven, right? Warm up the house! This Cookies and Cream Gooey Butter Cake got our house feeling nice and cozy.

Where did gooey butter cake start?

There are so many different varieties of gooey butter cake and it is made famous in St. Louis. The original gooey butter cake had a yeast raised sweet dough on the bottom.

Today, most bakers use a cake mix for the bottom of the cake. I enjoy being creative with the basic butter cake recipe and adding my own flair such as: Gooey Strawberry Cookies or Gooey Red Velvet Bars.

Yes you can make cookies instead of a cake in this recipe. The cookies are great for classroom parties or birthday parties.

My newest creation: Add OREOS to the cake mix. So what you have is cookies and cream cake.

    What makes butter cake gooey

What is gooey butter cake and what makes it gooey? Well, this butter cake is made with cream cheese and a stick of butter, therefore, the name gooey butter cake is appropriate. The top layer is soft and where the cream cheese lies. The bottom layer has the butter and cake mix.

This butter cake starts with a chocolate cake mix, so it has similarities to a chocolate gooey butter cake.

    Ingredients

    • butter
    • eggs
    • chocolate cake mix
    • powdered sugar
    • cream cheese
    • chocolate chips
    • oreo cookies

    Process

First, you want to make the bottom layer of the cake. There is only a few ingredients in the bottom of the cake. Eggs, butter and cake mix come together for the base of this cake.

You will want the butter to be a little soft so it blends easier with the eggs.

Then, you pour it into a 9x13 greased pan.

Cake batter on the bottom of the pan.
Spread the cake out evenly on the bottom of the pan.

The "gooey" topping comes next and you blend it together in a bowl, then spread it on top. The Oreo crumbs get folded into the cream cheese mixture.

    Bake

You will want to bake this cake at 350* for about 30-35 minutes. The cake is a little tricky to tell if it is done, so I recommend you using a toothpick to test it done.

The top will also start to be a light golden brown.

    FAQ

Can I use any kind of cake mix?

Yes! Any brand will do (though I prefer Betty Crocker or Duncan Hines). Also, you may use any flavor of chocolate. Devil's Food, Milk Chocolate, German Chocolate cake mix will all work.

After baking, the middle seemed to have shrunk down a little bit. Is this normal?

Yes! The outside rim will seem to be puffy but the inside will shrink a little bit. Completely normal.

Do I need to refrigerate this cake?

The cake is soft and delicious. Flavorful and chocolate-y. There aren't many ingredients and you can have it in the oven quickly. Then you can eat it. Gotta love that.
