This frosting would go great with Peppermint Chocolate Cake. It also would be a great topping for Hot Chocolate Cookies.
Ingredients
- powdered sugar
- milk - almond milk can be used
- peppermint extract
- butter - I would use regular butter, not margarine
- peppermint pieces - optional

Using a mixer
To make frosting, you certainly do not need a mixer. However, it does make one's life easier. I probably wouldn't even try it without one as the butter would be hard to mix. A hand mixer works well as does a stand mixer.
The butter
The butter needs to be softened, but not melted. Melted will result in a broken down frosting, for lack of better words. The frosting needs to hold its shape. We have a brown butter frosting that has melted butter, but this butter needs to softened, not melted.

Yes, you do not need to add the peppermints. The peppermint extract will have a lot of flavor.
I would just stick with the peppermint extract.
Tip
The measurements in this recipe will work well, however, you may want to add a bit more milk, or a bit more powdered sugar, depending on the consistency you like for your frosting.

Peppermint Frosting

- 1 Hand Mixer or stand mixer
Ingredients
- 4 cups powdered sugar
- ½ cup butter softened slightly
- 2 teaspoon peppermint extract
- 4 tablespoons milk or almond milk
- ½ cup chopped peppermints optional
Instructions
- Mix butter with a hand mixer or a stand mixer until smooth.
- Add in milk and mix well.
- Add in powdered sugar, one cup at a time until mixed well.
- Blend in the peppermint extract.
- Spread on a 9x13 cake. Sprinkle the chopped peppermints on top.
