    Gooey Red Velvet Bars

    Gooey Red Velvet Bars.  I know.  I know. They are such a lovely color of red. Red velvet has such a great taste but to add cream cheese to it? Um, yum!

    Hubby walked through the door after he arrived home from work and eyed these bars in the oven.  He said, "Those look promising."  Promising, they were.

    It is an impressive dessert.  The dark red velvet cake with the white, gooey, cream cheese topping.  It does look promising.  And impressive.  The taste?  Oh, so yummy.  The time it takes to make these gooey red velvet bars?  A matter of minutes and it was in the oven.  Easy, Easy.

    I got the idea from the Gooey Butter Cake I make.  Using a boxed Red Velvet cake mix, I followed the recipe the same.  While the Gooey Butter Cake which uses a yellow cake mix had a firmer bottom layer, this red velvet version had a more cake like layer.  So, so good.  Imagine this at a Christmas gathering.  The colors invite a Christmas setting.

    Red Velvet Bars-Great Christmas Cookies

    Add these bars to your Christmas tray. They would be a pop of color among the typical Christmas cookies.

    Gooey Red Velvet Bars

    Ingredients
      

    • 1 stick margarine
    • 2 eggs
    • 1 box red velvet cake mix

    Cream Cheese Layer

    • 2 eggs
    • 8 oz cream cheese
    • 1 lb powdered sugar

    Instructions
     

    • Melt margarine and beat in eggs. Add cake mix.
    • Mix well.
    • Spread into a greased 9x13 cake pan.

    Beat eggs, cream cheese, powdered sugar until creamy and pour over cake layer.

    • Bake at 350* for 25-30 minutes or until cake is set on the bottom and topping is a very light brown.
