Gooey Chocolate Chip Cheesecake Bars are, quite frankly, just as they sound. Loaded with chocolate and cream cheese, they are soft and flavorful. What else do you need in a cookie dessert?
I have a soft and chewy chocolate chip recipe I have made 4568 times, give or take a chocolate chip or two. It is an absolute favorite but sometimes it is nice to change it up a little. Since I make a lot of cheesecake around here, I thought why not combine the two favorites? A chocolate chip cookie with a cheesecake layer would sure to be a highlight of delicious.

Ingredients
- flour - all purpose
- white sugar
- brown sugar
- baking soda
- salt
- egg
- margarine - butter can be used
- chocolate chips - semi-sweet
- cream cheese - any brand will work with this recipe
Normally, I say that name brand cream cheese is the best for most recipes like cheesecakes, but in this case a store brand cream cheese will work fine.
Layering the batter
It is important to note that the batter will not cover the entire top of the cookie bars. The cream cheese mixture will pop through and that is okay. It is not only tasty but makes the bars look amazing too!

The cookie bars will come together easily. Yes, it has a longer list of ingredients, but it all blends together well and doesn't take much effort. This dessert will be baked in a 375 degree oven and will be done when golden brown and tests done with a toothpick. The cheesecake will be firm and cooked through.

Gooey Chocolate Chip Cheesecake Bars

- 1 cup margarine softened, can use butter
- ¾ cup white sugar
- ¾ cup brown sugar
- 1 egg
- 2 ¼ cup unbleached flour (or you can use bleached)
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 ½ cup chocolate chips
For The Cream Cheese Filling
- 8 oz cream cheese, softened
- 1 egg
- ½ cup white sugar
Instructions
- Preheat oven to 375℉ and grease the bottom and sides of a 9x13 cake pan.
- Mix margarine, sugars and egg together until well blended in a large bowl.
- Add in flour, baking soda and salt, stirring until mixed.
- Fold in chocolate chips. Set aside.
- For the cream cheese mixture, in a small bowl, mix together cream cheese, egg and sugar using a hand mixer.
- Spread ⅔ of the chocolate chip cookie batter on bottom of greased 9x13 cake pan.
- Spread cream cheese mixture on top of cookie batter.
- Using your hands, drop remaining cookie batter over top of cream cheese mixture. (Batter will not cover all of pan).
- Bake in a preheated 375℉ oven for 20 minutes or until lightly golden brown and toothpick tests clean.
- Cool, cut and serve.

These came out amazing! Mine ended up being in the oven for about 25-30 minutes, and the cookie dough looked a bit too dry so I added a small splash of water and it worked perfectly!
