What is in the dressing?
The dressing is a simple mix of about 6 ingredients. The key with dressing is to have a little bit of sweet that balances out an "acidic" taste. Vinegar based dressings almost have a bite to them that make them as good as they are.
The dressing pairs well with leafy green salads and their toppings. Especially bacon. Well, doesn't most things pair well with bacon?
This dressing has honey, Dijon mustard, apple cider vinegar, extra virgin olive oil and salt/pepper. We use fresh, raw honey in our home as we have our own bees. I would recommend only using fresh honey, but if you can't find any, store bought honey works well in dressings.
Can I replace sugar for the honey?
In a pinch, sure. You will definitely need a sweet in this dressing. I don't recommend it though. The taste of honey blends well with the Dijon mustard. They are a pair, you know.
Can I top the salad with any toppings?
The bacon is important, hence the name. The smokey flavor of the bacon pairs so well with the honey mustard dressing. I used cherry tomatoes, hard boiled eggs, avocados, croutons and bacon.
You can certainly add or subtract salad favorites as your family enjoys. Just keep the bacon.

How to store a salad
Storing a salad can be tricky. The lettuce can get wilted quickly, the toppings less than crisp when stored in a fridge for a prolonged period of time. I recommend eating this salad the same day it is made for best results.
You can make ahead of time (maybe 2-3 hours) before serving but it is always best to eat salads relatively quickly after making them. If you do have some salad leftover, and you might, I would recommending storing it in an airtight container for no longer then a day. I would also recommend a produce storage container.
What should you pair it with?
As a main meal, pair it with Garlic Tomato Flatbread. As a side dish, Best Slow Cooker Pulled Pork would be great.

Bacon Lettuce Salad with Honey Mustard Vinaigrette Dressing
Ingredients
- 6 cups green leaf lettuce
- 1 cup cherry tomatoes sliced in half
- 1 cup croutons
- 4 slices bacon cooked and crumbled
- ½ avocado sliced
- 3 eggs hardboiled and sliced
Honey Mustard Vinaigrette Dressing
- ⅓ cup extra virgin olive oil
- 3 Tablespoon honey
- 1 Tablespoon Dijon mustard
- ½ tsp salt
- ⅛ teaspoon black pepper
- 3 teaspoon apple cider vinegar
Instructions
- Wash lettuce and cut it into bit sized pieces. Place in large bowl
- Place cooked bacon, cut tomatoes, hard boiled eggs, croutons, sliced avocados on top of the lettuce
- Blend all dressing ingredients in a blender or Magic Bullet. Pour over salad and toss
- Serve
