Bacon Lettuce Salad with Honey Mustard Vinaigrette Dressing

Delicious honey and mustard come together to top this salad with pops of flavor. Can be main meal or a side!

Ingredients

  • 6 cups green leaf lettuce
  • 1 cup cherry tomatoes sliced in half
  • 1 cup croutons
  • 4 slices bacon cooked and crumbled
  • ½ avocado sliced
  • 3 eggs hardboiled and sliced

Honey Mustard Vinaigrette Dressing

  • ⅓ cup extra virgin olive oil
  • 3 Tablespoon honey
  • 1 Tablespoon Dijon mustard
  • ½ tsp salt
  • ⅛ teaspoon black pepper
  • 3 teaspoon apple cider vinegar

Instructions

  • Wash lettuce and cut it into bit sized pieces. Place in large bowl
  • Place cooked bacon, cut tomatoes, hard boiled eggs, croutons, sliced avocados on top of the lettuce
  • Blend all dressing ingredients in a blender or Magic Bullet. Pour over salad and toss
  • Serve
