I am someone who loves to have sit down meals with my family. My husband and I feel the dinner hour is such a special time and make an effort to gather everyone around the table. Sometimes, it is indeed an effort, but the family time is so special!
Trying to find a meal that is easy to make on those busy days, yet family pleasing can be an effort. The other day, my family tried Michael Angelo’s Family Sized Lasagna with Meat Sauce paired a delicious Apple Cranberry Lettuce Salad. My children came in from various activities that evening and I had the lasagna made. The house smelled wonderful and we were able to sit down, enjoy family time and talk about our day. It is nice to slow life down.

All the Michael Angelo’s meals are easy, a family-favorite and they have single-serve meals that can be made in minutes. I like that there are no artificial colors, flavors or sweeteners. They also have ingredients you can pronounce and that you can find in your kitchen. We could certainly tell the quality of ingredients when we ate the lasagna. It was delicious!

How to make the apple cranberry lettuce salad
When I bought the Michael Angelo’s Lasagna at Walmart, I was also able to buy the ingredients for the Apple Cranberry Lettuce Salad.
The green leaf lettuce, cashews, dried cranberries and apples are the base layer of this delicious and easy salad.
Simply wash and dry the lettuce. Place in a large bowl and add the cashews, dried cranberries and apples. Then, I added cut Swiss Cheese to the top of the salad and it was perfect!
To make the Poppy Seed Dressing, simply mix oil, red wine vinegar, sugar, dry mustard, poppy seeds and salt to a blender, then pour on the salad when ready to serve.
Most of my family likes to add their own dressing so they get the perfect amount for them. Some like a little, some like a lot.

Apple Cranberry Lettuce Salad
- 1 head green leaf lettuce washed and cut
- 1/2 cup cashews
- 3/4 cup dried cranberries
- 1 medium apple washed and cut
- 2 slices Swiss Cheese cut
- 1/3 cup oil
- 1/4 cup red wine vinegar
- 1/4 cup sugar
- 3/4 teaspoon dry mustard
- 1/2 teaspoon poppy seeds
- 1/4 teaspoon salt
- Place lettuce in a large bowl
- Add cashews, cranberries, apple and Swiss Cheese on top of lettuce
- Set aside
- Mix together oil, red wine vinegar, sugar, dry mustard, poppy seeds and salt in a blender
- Toss salad and pour dressing over salad when ready to serve
