Apple Lettuce Salad With Poppy Seed Dressing is a delicious salad with many, many layers of goodness in every bite. The poppy seed dressing adds such a layer of sweet and tart that makes every ingredient in the salad pop with flavor. The salad is adaptable to your tastes and and preferences.

Ingredients
- red leaf lettuce - green leaf would be good as well, or a mix
- apple - I used Honeycrisp. A Gala would be good, or for something a little sour, Granny Smith.
- sunflower seeds - shells removed
- dried cranberries
- Swiss cheese
- red wine vinegar
- sugar
- dried mustard
- salt
- poppy seeds
- oil - vegetable oil
The salad
The red leaf lettuce, sunflower seeds, dried cranberries and apples are the base layer of this delicious and easy salad.
Simply wash and dry the lettuce. Be sure the lettuce is pretty dry before you use it. A salad spinner works great! Place in a large bowl and add the cashews, dried cranberries and apples. Then, I added cut Swiss Cheese to the top of the salad and it was perfect!
Making the poppy seed dressing
To make the Poppy Seed Dressing, simply mix oil, red wine vinegar, sugar, dry mustard, poppy seeds and salt to a blender (I like using a Magic Bullet), then pour on the salad when ready to serve.
Salad Making Tips:
- The apples will turn brown. If this salad isn't going to be eaten right away, then I would sprinkle this Fruit Fresh on top of the apples. It helps the apples from turning brown. I ALWAYS have some at my house because I also use it to can fruit like peaches. If you put the salad dressing on right away, that will help the apples not to turn brown.
- The salad can be made ahead of time, however I would make sure to NOT add the dressing until just before serving. Be sure to wrap the salad well with plastic wrap.
Leftovers
This apple lettuce salad with poppy seed dressing is best eaten within 24 hours of making it. Be sure to keep the salad covered with plastic wrap or with an airtight lid.

Apple Lettuce Salad With Poppy Seed Dressing
Equipment
- 1 blender or Magic Bullet
- 1 salad spinner optional
Ingredients
- 4 cups red leaf lettuce washed and cut
- ½ cup sunflower seeds without shells
- ¾ cup dried cranberries
- 1 cup apple washed and cut
- ½ cup Swiss Cheese about 2 sandwich slices, cut
- ⅓ cup vegetable oil
- ¼ cup red wine vinegar
- ¼ cup sugar
- ¾ teaspoon dry mustard
- ½ teaspoon poppy seeds
- ¼ teaspoon salt
Instructions
- Place cut lettuce in a large bowl.
- Add sunflower seeds, dried cranberries, apple pieces and Swiss Cheese on top of lettuce.
- Set aside.
- Mix together oil, red wine vinegar, sugar, dry mustard, poppy seeds and salt in a blender (or Magic Bullet) on low setting.
- Toss salad and pour dressing over salad when ready to serve.
