Watergate Salad, otherwise known as Pistachio Fluff, is an old fashioned recipe your grandma used to make! This fluff salad is light, airy and packed full of flavor. It starts with a pudding mix and uses pineapple as the fruit. This salad is such a great addition to your dinner, picnics or potlucks!

To enjoy a simple salad is just what every potluck or picnic needs. A fluff salad that doesn't take much time to make but will be the star of the meal. This Watergate Salad recipe only has 4 ingredients and can be made in minutes. No baking required!
We like fluff salads around here. Salads such as Strawberry Fluff Salad and Creamy Hawaiian Salad are favorites whenever I make them. Since simplicity is what we like around here, they fit just nicely on our menu.
Ingredients
- pistachio pudding - can use store brand
- Cool Whip - I recommend only using Cool Whip
- pineapple chunks in 100% juice - some use crushed pineapple. We prefer the chunks
- mini marshmallows

No milk needed
Most pudding mixes need a milk of some kind to blend into the pudding mix to thicken it and help make it, well, pudding! However, what is unique about this recipe is it doesn't call for milk. Instead, the pudding mix is mixed in with the pineapple and the pineapple juice. That will thicken the mix enough to then mix in with the Cool Whip. The science of baking is always amazing!

Add In's
- chopped pecans
- chopped walnuts
- cherries for the top
You can also add in another can of pineapple, however, be sure to drain the pineapple juice from the second can before adding it.

Chill
If you want to eat this Watergate Salad right away, you can! However, for best results, I am recommending letting the salad chill for at least an hour before serving.
Leftovers
Leftovers (if there are any!) need to be kept in an airtight container in the refrigerator for up to 48 hours. Personally, I feel this salad is best eaten within 24 hours of making it as the Cool Whip, I think it separates a little bit. It is more of a personal preference and it can be eaten for 48 hours.
This fluff salad is a great addition to your 4th of July picnic. It will remind you of what Grandma used to make and back to childhood memories. It is also so, so delicious!

Ingredients
- 3.4 oz instant pistachio pudding mix
- 8 oz Cool Whip thawed
- 20 oz pineapple chunks can use crushed
- 1 cup mini marshmallows
Instructions
- Pour the pineapple and its juice in a large mixing bowl.
- Stir in the pistachio pudding mix. (Just the mix, no need to make it into pudding!)
- Fold in the Cool Whip. Stir in the mini marshmallows.
- Chill for at least one hour.
- Serve.
