Otherwise known as Kitchen Sink Soup, this Poor Man's Soup is so easy and affordable to make with just a little bit of everything you likely already have in your pantry. The flavor is amazing and it cooks in the crock pot or stove top, whichever you prefer!

This Poor Man's Soup is perfect on those cold winter days. It has such easy ingredients and it doesn't take much time to put together. If you are using a crock pot, it is a dump and go meal - my favorite on a busy day. (Or an evening with kid's activities!)
The ingredients are simple and the flavor abounds. My husband says this soup is even better the next day as the spices and seasoning have a chance to get to know each other for a while. Yes, leftovers are a good thing to have!
I make a lot of soups around here and Hamburger Soup is a similar soup, but has noodles. Hamburger Tortellini Soup is a nice twist on that soup as well.

Ingredients
- beef broth - it can be regular or reduced sodium
- tomato sauce
- canned tomatoes - we use petite diced, but any diced tomatoes will work
- carrots
- ground beef - cooked and grease drained
- potatoes - no need to peel the potatoes for this recipe
- salt/pepper/garlic powder
Crock pot
If you cook this recipe in the crock pot, it will take at least 5 hours on high to fully cook if you like your potatoes fully soft. The ground beef will need to be cooked before adding it to the crock pot and the grease will need to be drained.
Stove top
The stove top is the quickest way to make this Poor Man's Soup. It will need to cook on the stove for at least 45 minutes on a medium heat. Be sure to maintain a soft boil so the potatoes will cook and the carrots will soften. The soup will need to be stirred on occasion.
However, the ground beef will need to be cooked in a frying pan before adding to the soup. All of the ingredients can be added to the pot at once.

Potatoes, carrots and tomatoes
- The carrots can be peeled and chopped into bite sized pieces.
- There are a variety of potatoes, however, the best for this recipe would be a Russet or a Red potato. No need to peel the potatoes unless you prefer it.
- Canned tomatoes are used for this recipe. If you like a little spice, using a can of Rotel (mild or medium) can add a nice flavor to the soup. A regular can of diced tomatoes can be used as well.

Poor Man's Soup

Ingredients
- 2 lbs ground beef
- 4 cups beef broth
- 3 cups potatoes washed, chopped into bite sized pieces, no need to peel
- 3 medium carrots washed and peeled, chopped into bite sized pieces
- 1.5 oz tomato sauce
- 14.5 oz petite diced tomatoes
- 1 ½ teaspoon salt
- 1 ½ teaspoon pepper
- 2 teaspoon garlic powder
Instructions
- Brown ground beef (adding the salt, pepper and garlic powder) in skillet over medium heat until no longer pink. Drain grease.
- To a large crock pot, add beef broth, tomato sauce, tomatoes, chopped carrots, drained ground beef and chopped potatoes.
- Cook on high for 5 hours or until potatoes are tender.
- Serve with cheese and crackers or soft bread.
