    A delicious pasta salad, this Mostaccioli Salad is full of flavor and is so easy to make. The blend of pepper and onion come together for a tangy dressing on top of Mostaccioli noodles. This salad is perfect as a side dish for supper or at a picnic!

    Oh, the smoky bacon flavor is throughout this Mostaccioli Salad. The tang of the vinegar and mustard pair well with the onion and parsley. Every flavor rings true and blends perfectly. Yes, this pasta salad recipe is a keeper.

    Every one loves a good pasta salad side dish. One of my favorites is Italian Tortellini Salad. 4 Ingredient Pasta Salad is pretty great too. Spinach Bow Tie Pasta would be an excellent meatless main course!

    Ingredients

    • mostaccioli pasta
    • olive oil
    • vinegar - white
    • sugar
    • mustard - ground
    • salt
    • pepper
    • garlic powder
    • onion - red
    • parsley flakes
    • bacon bits - optional

    Olive oil

    Choosing an olive oil can be rather important. It would be my recommendation that a lighter oil, one for salads be used for this recipe. Now, some olive oil is used for salads but is a much heavier oil. It will say "rich and fruity flavor". Make sure you look at the label and choose according to your tastes. I personally feel the rich and fruity flavor is a bit strong. I like the light tasting one better.

    Food processor

    A food processor or blender is needed for this recipe. Either can be used, but the dressing for the pasta salad needs to blended well together.

    Add in options

    • black olives
    • cherry tomatoes
    • cheese cubes
    • green peppers
    • cucumbers

    Chill out

    It is important after mixing all the ingredients together, to let the salad sit in the refrigerator for up to 24 hours. The minimum time is overnight. It will taste fine if you don't let the flavors blend, wonderful if you do!

    Storage

    The salad needs to be kept cool. Be sure to take care when taking to a picnic or another outdoor event. Leftovers need to be kept in the refrigerator for up to 3 days. Be sure to store in an airtight container or a bowl covered in plastic wrap.

    This Mostaccioli Salad is great for picnics, BBQ's or holiday dinners. It is an impressive pasta salad that your family and friends will love!

    Equipment

    • 1 serving bowl
    • 1 food processor or blender

    Ingredients

    • 16 oz mostaccioli pasta
    • ½ cup olive oil light tasting
    • 1 cup vinegar
    • 1 cup sugar
    • 2 Tablespoons ground mustard
    • 1 teaspoon salt
    • 1 teaspoon pepper
    • ½ cup red onion cut into chunks
    • 1 teaspoon garlic powder
    • 1 teaspoon parsley flakes

    Instructions

    • Boil pasta according to package directions.
    • After the pasta is tender, drain and rise in cold water.
    • Place pasta in a serving bowl and drizzle olive oil over top. Blend.
    • In a food processor or blender, blend the onion, vinegar, sugar, mustard, salt, pepper, garlic powder and parsley flakes. Pour over the pasta. Mix well.
    • Cover the boil with plastic wrap and chill in a refrigerator overnight.
    • Add any of the add-in's right before serving. Serve.

    Notes

    If taking the salad to an outdoor event, be sure to take care the salad doesn't get too warm.
