    Easy Cucumber Salad

    This simple and easy cucumber salad has the tang of peppers and onions yet the sweet of sugar in the dressing. Easy to make and great for picnics or gatherings.

    Easy cucumber salad has only 3 main ingredients, plus the dressing. The salad is a cinch to make. The only additional time it needs is the sitting and marinading all the goodness of flavors while in the fridge.

    This simple salad recipe would be great for a picnic, gathering or for your family supper. The best part of this salad? It almost, ALMOST tastes like a pickle. Yes, really.

    And if you don't like pickles? Try it anyway because you may not think it tastes like a pickle. Out of the 6 people in my family, 3 ate it and I was the only one that thought it had pickle qualities. (Maybe it was the vinegar.) The other two enjoyed the salad, green peppers and all. That, my friends, is a huge improvement in picky eating.

    What do I need for this cucumber recipe

    This salad recipe only calls for about 7 ingredients and one of the ingredients is salt. I use coarse salt because we had some around. If I didn't have any, I probably would have used table salt and wouldn't have seen too much of a difference, though I do recommend course salt.

    What is the difference between pickling salt and table salt

    The difference is additives. The table salt has additives in it such as anti-caking that keeps the salt from clumping together. The pickling salt is additive free. Kosher salt would be a good alternative as it is free from additives.

    Making cucumber salad

    Salads are great to make anytime of year but especially in the spring and summer or Holidays. With Easter coming up, salad recipes are often taken and enjoyed by families. My Italian tortellini salad is a hit as is my strawberry lettuce salad. The easy cucumber salad can be made the day before and actually is better that way. (Save yourself some time!)

    To make the salad, cut up cucumbers, onions and green peppers and place them in a medium sized bowl. This salad looks really pretty in a clear bowl like this one. Add the salt to the the vegetable mixture and stir.

    Then add the vinegar, sugar and olive oil to a blender and mix well. Pour over top of the salad and cover. The salad should sit in the refrigerator for at least 5 hours before serving so the flavors have a chance to mix.

    Chopped cucumbers in a clear bowl on a striped towelUse a slotted serving spoon to serve so any leftover dressing can drain away from the cucumbers. After serving, keep the leftovers chilled in a fridge. This salad is best served within 24 hours.

    Ingredients
      

    • 3 ½ cups cucumbers about 3 medium
    • ¾ cup yellow onion chopped
    • ½ cup green peppers chopped
    • 1 T coarse salt
    • 1 c white sugar
    • 1 T olive oil
    • ⅔ cup white vinegar

    Instructions
     

    • Mix chopped vegetables in a medium serving bowl
    • Put salt over vegetables and stir, set aside
    • Put sugar, olive oil and vinegar in a blender and mix well
    • Pour over vegetables and stir
    • Cover the bowl and place in refrigerator at least 5 hours
    • Serve. Refrigerated leftovers (be sure it is covered)
    • Salad will be best 24-36 hours after making it
