    Apple Coffee Cake

    This Apple Coffee Cake is great for Holidays, family gatherings or anytime! It uses apple pie filling so no peeling apples required. Drizzle the top with a frosting glaze and this breakfast recipe will have everyone asking for seconds!

    Having a go-to breakfast or brunch favorite is important. From baby showers to wedding showers to Holiday gatherings, a good breakfast recipe is always needed and sometimes easy to forget about until last minute.

    This Apple Coffee Cake is made from canned apple pie filling and nestled in a soft bed of dough. The top is drizzled with a light frosting glaze to add to the perfection. This coffee cake recipe is simply delicious.

    Ingredients

    • flour - all purpose flour
    • sugar
    • baking soda
    • baking powder
    • margarine - or butter can be used
    • eggs
    • sour cream
    • water
    • apple pie filling
    • powdered sugar - for the frosting
    • water - for the frosting
    • margarine - for the frosting

    Except for the apple pie filling, most of the ingredients listed above are probably already in your pantry. It is quite the easy recipe to put together. The dough ingredients just get mixed together in a large mixing bowl.

    Baking

    When baking this coffee cake, the dough will not cover the entire top of the cake. the dough will be split in half, then the bottom of the pan will be covered with the dough.

    The apples will be placed on the dough then topped with the remaining dough.

    The dough rises significantly so the apples only poke through a little of the top, which adds to the appeal of the dish.

    This will bake at 375 degrees for 35-40 minutes or until the coffee cake is cooked through.

    The frosting

    The frosting is a simple blend of melted margarine (or butter), powdered sugar and water. It is just a drizzled glaze and really makes the apple coffee cake pop.

    This apple coffee cake is perfect for a breakfast or brunch, especially around Christmastime! Drizzled with an easy frosting, this coffee cake is light and fluffy and full of flavor!

    Equipment

    • 1 9x13 pan
    • 1 mixing bowl

    Ingredients

    • 3 cups all purpose flour
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • ¾ cup sugar
    • 1 cup margarine or butter
    • 2 eggs
    • ½ cup sour cream
    • ¼ cup water
    • 40 oz apple pie filling 2 cans

    For The Frosting

    • 1 tablespoon margarine melted
    • 1 tablespoon water
    • ¾ cup powdered sugar

    Instructions

    • Preheat oven to 375℉. Spray a 9x13 cake pan with cooking spray.
    • In a large mixing bowl, mix together flour, baking powder, baking soda and sugar.
    • Stir in margarine (softened), eggs, sour cream and water until all is incorporated.
    • Spread ½ of the mixture in the bottom of the cake pan.
    • Carefully spread apple pie filling on top of mixture in cake pan.
    • Spread the rest of the dough on top of the apple pie filling. It will not cover the whole pan and that is okay.
    • Bake at 375℉ for 35-40 minutes or until coffee cake is cooked through.
    • Remove from oven and let cool on the counter.

    For The Frosting

    • Whisk together the melted margarine, water and powdered sugar in a small bowl.
    • Drizzle over mostly cooled coffee cake and serve.

    Notes

    The powdered sugar amount does vary. Add a little bit at a time until you reach the desired consistency you prefer.
