    Look no farther for a special fall breakfast for your family. Pumpkin French Toast is just what needs to be on your table this fall season. After all, the pumpkin, cinnamon and nutmeg blends together perfectly for a breakfast your family will love.

    Having pumpkin in recipes for breakfast, lunch or supper definitely adds to the fun of fall. Fall is pumpkin and we all enjoy great pumpkin decorations and recipes such as Pumpkin Pie Bars and Pumpkin Icebox Cake.

    It is time for a breakfast recipe such as Pumpkin French Toast. This classic French toast recipe has a fall twist with the tastes of pumpkin, nutmeg, ginger and cinnamon. This French toast is then topped with syrup or whipped cream. Oh yum.

    Ingredients

    • pumpkin puree - canned pumpkin
    • Texas toast bread
    • cinnamon
    • nutmeg
    • ginger
    • vanilla
    • flour - all purpose
    • eggs
    • milk - 1% or 2% can be used

    What is Texas toast?

    Everything is bigger in Texas, right? Well Texas toast is a larger slice of bread that makes a perfect French toast. The thinner slices of bread (regular slices) work okay, but the bread tends to get too soggy with the batter. A Texas toast French toast doesn't tend to be soggy. The bread is thick enough where the batter doesn't have to soak all the way through, unless you want it to.

    Baking the bread

    The pumpkin French toast is cooked on the stove. However, if you like the bread to be a little firmer, you can place the bread in the oven on a low temperature, 170 degrees for 10 minutes or so before eating.

    Alternatives

    • Almond milk can be used in place of the milk.
    • Gluten free bread can be used in place of the Texas toast.
    • Gluten free flour can be used in place of the all purpose flour.
    • Syrup can be used to top the French toast. So can whipped cream or powdered sugar.

    Storing leftovers

    Leftovers can be stored in the refrigerator for up to 48 hours. They need to be kept in an airtight container.

    Equipment

    • 1 griddle or frying pan

    Ingredients

    • 10 slices Texas Toast Bread
    • 1 cup pumpkin puree
    • 2 eggs
    • 1 ½ cup milk 1% or 2%
    • 1 teaspoon cinnamon
    • ½ teaspoon nutmeg
    • ¼ teaspoon ginger
    • 1 teaspoon vanilla
    • 1 tablespoon all purpose flour

    Instructions

    • Preheat griddle to 325℉.
    • In a medium bowl, whisk the eggs together.
    • Whisk in the flour and milk.
    • Stir in the pumpkin, spices and vanilla.
    • Grease the griddle with non stick cooking spray.
    • Using tongs or a fork, dip the Texas toast bread into the pumpkin mixture on both sides of the bread.
    • Place on griddle and bake 4-5 minutes per side until the toast is starting to lightly brown.
    • Repeat.
    • Remove from griddle and serve. Top with butter, syrup, powdered sugar or whipped cream.

    Notes

    If you don't have a griddle, you can use a flat frying pan as well. Cook over medium heat.
