    Apple Cinnamon Pancakes

    Only four ingredients are in these Apple Cinnamon Pancakes. In fact, this breakfast recipe is so simple to make it can be made for breakfast, or breakfast for supper! These pancakes are light and fluffy and smells so good while they are cooking.

    These apple cinnamon pancakes can be made anytime, but especially when apples are abundant, like in fall. The apple and cinnamon flavors just say fall and if you want another apple flavor on the table, this apple cider will be perfect to pair with these pancakes.

    Light and fluffy pancakes are the talk to the table and when apples or another fruit are added to the pancakes, like banana pancakes, the pancakes get even more light and flavorful.

    Ingredients

    • pancake mix - this recipe uses Pearl Milling Company pancake mix
    • water - per back of the box
    • apple - one large Honeycrisp apple
    • cinnamon

    Types of apples to use

    A Honeycrisp apple was used for this apple pancake recipe. However, a Golden Delicious would work well as would a Gala apple would taste great too. If you need a guide for baking and cooking with apples, here is a apple guide.

    A grater is used to grate the apple. You can slice the apple but it is quicker and the pieces finer if you grate it.

    The juices will be a great addition to the pancakes flavor so that is another great reason to grate the apple instead of chopping it. But either way does work.

    Using a box mix

    So yes, this recipe calls for a boxed pancake mix. I find that made from scratch pancakes like this Fluffy Buttermilk Pancake recipe is absolutely delicious. However, the boxed mixes can be great too, especially when you add additions to it, like apples and cinnamon.

    Cooking the apple pancakes

    The pancakes will need to be cooked on a griddle or square cookware, like shown below. Cook on medium/low heat about 3 minutes on each side or until the batter bubbles. Then it will be time to turn the pancakes.

    How to serve the pancakes

    After the pancakes are done cooking, the pancakes can be served with honey, syrup, powdered sugar or whipped cream.

    An apple topping would be delicious too, such as apple pie filling. That could be pretty sweet, so use sparingly.

    Equipment

    • 1 grater
    • 1 square pan

    Ingredients

    • 2 cups pancake mix Pearl Milling pancake mix
    • 1 ½ cup water
    • 1 large apple
    • ½ teaspoon cinnamon

    Instructions

    • Mix pancake mix and water together in a large bowl. Don't over mix. Set aside.
    • Shred the apple using a grater. No need to peel the apple. Place in the pancake batter.
    • Add cinnamon and mix.
    • Turn on pan or griddle to medium/low heat and lightly grease with cooking spray. Preheat for 2 minutes.
    • Place approximately ½-3/4 cup of batter on the pan/griddle.
    • Cook for 3 minutes or until batter starts to bubble. Flip to other side and let cook for another 2-3 minutes.
    • Remove from heat.
    • Serve with syrup, honey, whipped cream or apple topping.
