Ingredients
- frozen corn - frozen, not thawed
- red pepper, diced
- Dry Hidden Valley Ranch Dip
- bacon - any brand
Ranch dip
To use the ranch dip, get the Dry Hidden Valley Ranch Dip packet.
You will only need about ½ packet of the dip mix, you can save the rest for Ranch Potatoes. If you would rather not add the ranch seasoning, you can season it differently using salt and garlic powder. Different taste of course, but it is an alternative.
How to make fried corn
It is a mix of flavors. I added Red Bell Pepper to the dish, though if you prefer orange or yellow, go ahead and use it. Bacon is a must and when you fry up the bacon, use a large frying pan to ensure all ingredients will fit.
The bacon will cook first so the corn can be fried in the grease of the bacon. If that is a little much for you, drain off the grease and fry the corn in a little olive oil or butter. (I do recommend the grease though.)
Only use frozen corn not canned corn. The corn will have a bite to it when you use frozen corn. If you don't like corn chewy, using frozen corn helps with that. Add the peppers and ranch dip as well and cook for 7-8 minutes, stirring occasionally. If the pan is a bit dry, add 2 tablespoons of water to the pan when you add the ranch packet in.
This easy and delicious side dish recipe is perfect for a family meal or a large gathering. Kids and adults alike will enjoy this ranch flavored fried corn.
