I personally use Imperial margarine for this cookie bar recipe and I believe it to work the best. Others may have varying opinions about butter verses margarine and you can certainly use butter.
The imperial margarine is what I use and it is tried and true with this recipe.
Putting foil on the pan
Putting foil on the pan is not necessary but it does allow you to remove the bars and cut them easier.
That is especially helpful when you are serving guests or are taking them to a bake sale and you want the pieces to be cut evenly and neatly.
The foil does not need to be greased in any way. It will peel back nicely from the M&M Cookie Bars.
How to make M&M cookie bars
The sugars, butter and egg need to be blended together first. For the best results, all the ingredients shouldn't be mixed together at the same time. Cream the butter, sugars and egg together.
Next, add the flour, baking soda and salt.
Stir the flour mixture together with the butter mixture until well blended. Now, it is time for the yummy part.
Spreading the cookie dough
Spread the cookie dough out evenly and carefully using a wooden or plastic spoon.
Bake
Bake in a 375 degree oven for 30-40 minutes or until cookie is set and a golden brown.
Wait! What about the M&M's?
Yes, these are M&M cookie bars. We need M&M's! When the bars have baked for at least 20 minutes, pull the bars out of the oven and carefully (the pan is hot) set the M&M's on top of the bars.
I add the M&M's last so the colors won't bleed while baking and it will give a nice crisp look to the bars.
Place the cookie bars back into the oven to bake for the remainder of the time left.

M&M Cookie Bars

- 1 9x13 pan
Ingredients
- 1 cup margarine softened
- 1 egg
- ¾ cup white sugar
- ¾ cup brown sugar
- 2 ¼ cup all purpose flour I use unbleached but bleached will work
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup chocolate chips semi sweet or milk chocolate
- 1 cup M&M's
Instructions
- Preheat oven to 375°.
- Cover a 9x13 baking pan with foil. Set aside.
- Mix the softened butter, sugars and egg in a large bowl.
- Stir in the flour, baking soda and salt.
- Fold in the chocolate chips and M&M's.
- Spread on the bottom of the 9x13 pan.
- Bake at 375° degrees for 35-40 minutes or until cookie is set and turns a golden brown.
- Remove from oven and let cool completely. Remove bars from pan and peel back the foil. Cut into squares.
- Serve by itself or with ice cream.
