These cookies are so soft and gooey and sprinkled with the color green. In fact, they are great for St Patrick's Day. Your child will enjoy taking these Gooey Butter St Patrick Day Cookies to their classroom to share as a treat.

Ingredients
- yellow cake mix - any brand will work
- egg
- vanilla extract
- butter - or margarine
- cream cheese - Philadelphia or to save money, store brand will work with this recipe
- green and white sprinkles
- powdered sugar

The only thing not shown above is the vanilla and the sprinkles. Other than that, it is such simple ingredients!
What order to mix the ingredients
It is much easier on yourself if you use a hand held mixer or a stand mixer. It is possible to not use one, but you will probably be mixing it for a while. It is also important to mix the butter and cream cheese together first. Both the butter and cream cheese needs to soften on the counter for about 20 minutes first. That will help them to blend together better.

The egg and vanilla are next, then the cake mix is last. The batter will be thicker than a normal cookie dough.

Powdered sugar
Next, the cookie dough will be rolled in a light coating of powdered sugar. It will be helpful to prevent the cookies from sticking to the pan. The gooey butter St Patrick cookies also need to be flattened prior to them baking, however they do spread on their own as well. The cookies just need a little bit of help to get started.

Tips
- Always remember to roll the cookies first in powdered sugar before flattening with a spatula or using your hands. It makes the process easier.

Gooey Butter St Patrick Cookies

- 1 Hand Mixer or stand mix
Ingredients
- 13.25 oz yellow cake mix
- 8 oz cream cheese softened
- ½ cup butter or margarine, softened
- 1 egg
- 1 teaspoon vanilla extract
- ⅓ cup powdered sugar
- green, white and/or gold sprinkles or decorating sugar
Instructions
- Place butter and cream cheese on counter to soften for 20 minutes.
- Preheat oven to 350℉.
- Mix together soften butter and cream cheese with a hand mixer or stand mixer.
- Add egg and vanilla and mix on until combined.
- On low speed, mix in yellow cake mix.
- Using a 1 inch cookie scoop, or a spoon, scoop dough out and place that cookie dough a bowl with the powdered sugar. Take out and roll with your hands into a ball. Place on an ungreased cookie sheet. Using your hands or a spatula covered in powdered sugar, flatten the cookie slightly.
- Sprinkle with sprinkles or decorations.
- Bake for 10 minutes or until cookies are firm on the top.
- Let cool for 10 minutes then remove from the cookie sheet to a cooling rack. Cool completely.
- Serve.
