This Fried Parmesan Corn is a simple side dish recipe that is only 6 ingredients and can be made up in less than 15 minutes! The blend of garlic, parmesan cheese and sweet corn comes together for a great addition to any meal.

Sometimes sweet corn on the cob isn't in season, so what is the next best thing? Frozen sweet corn with all the flavors and goodness from the cob. Fried Parmesan Corn is fried on the stove in a skillet and covered in butter, chives and, of course, Parmesan cheese. Keeping it real, my son ate three giant spoonful's of this delicious corn side dish recipe.

Ingredients
- frozen corn - any brand will work, I used Kroger brand for this recipe.
- butter - real is preferred over margarine, however, if you have a dairy allergy, margarine will work.
- chives - fresh or dried
- garlic powder
- parmesan cheese - grated was used for this recipe
- sea salt/pepper
What skillet to use
A large skillet is needed for this recipe. This fried corn recipe was made using a cast iron skillet. I recommend it, as I feel it cooks everything evenly and is perfect for frying corn. A cast iron skillet can also be used in the oven and on top of a campfire. A regular skillet can be used as well!
Frying the corn
The corn is really easy to make. It starts with butter in the skillet, then add the corn and start frying. That is pretty much it. The spices are added and another pat of butter.
The whole cooking time takes less than 15 minutes. (About 12-14 to be exact.) The corn will need to be stirred on occasion, but it is such a simple recipe to make while cooking the main dish for the meal.

The leftover corn can go into an airtight container in the refrigerator for up to 3 days.

Fried Parmesan Corn

- 1 cast iron skillet 10.25 inch
Ingredients
- 1 ½ lbs sweet corn frozen
- 2 tablespoon butter divided
- 1 tablespoon chives fresh or dried
- 1 tablespoon garlic powder
- ⅓ cup parmesan cheese grated
- 2 teaspoon sea salt
Optional
- 1 teaspoon ground pepper
Instructions
- In a large skillet, melt 1 tablespoon butter.
- When the butter is melted completely, add the corn and let cook over medium heat for 3 minutes, stirring occasionally.
- Add the garlic powder, chives, 1 tablespoon of butter, parmesan cheese and sea salt. Stir.
- Cook for another 9-10 minutes on medium heat, stirring occasionally.
- Remove from heat and serve.
