Here's a little secret: the Christmas Banana Pancakes start with a pancake mix! Make ordinary pancake mix shine with the added ingredients of bananas and Christmas sprinkles.

Christmas morning calls for a fun (and sometimes fast, depending on your plans!) breakfast. The kids are excited and the presents are getting unwrapped. So how about making up a batch of these Christmas Banana Pancakes.
The secrets to these pancakes is it starts with a pancake mix. I know, that may make many of you wonder. After all, I make homemade pancakes like Buttermilk Pancakes. However, I'm telling you, these pancakes can sparkle with sprinkles (and bananas!).

Ingredients
- Pancake mix - any brand you would like. I used Kroger brand.
- Ripe banana - A ripe banana mashes easier.
- Vanilla
- Christmas sprinkles - red and green of course!
- Water
I used one banana because that is what I had. Two bananas can be used for more flavor.
I also like to add a little vanilla to add a little extra flavor. It isn't listed on the pancake box (it might be on yours) but even if it isn't listed, a little vanilla adds a lot of flavor.
How to make Christmas banana pancakes
This breakfast recipe couldn't be any more simple. In fact, if you want to make overnight cinnamon rolls as well, that would be a real treat!
Mix the pancake mix according to box instructions. My box only called for water so that is what I will be referencing. After mixing the pancake mix together, stir in the mashed banana.
There will be some lumps and that is okay.
Next, stir in the Christmas sprinkles. These don't really need to be measured, after all, a little or a lot will work!
Cook
Cook the pancakes by box instructions, however most pancake recipes need to be placed on a hot pan or griddle, lightly sprayed with cooking spray. Then scoop out a ½ cup or so of pancake mix (again, depending on how big you want your pancakes). Cook over medium heat until the pancakes start to bubble. Then flip them over and cook for another 2 minutes or so.
Toppings
Top these pancakes with whipped cream, bananas, more sprinkles or a blueberry sauce would be great as well!

Christmas Banana Pancakes

- 1 griddle
Ingredients
- 2 cups pancake mix
- 1 ⅓ cup water
- 1 ripe banana mashed
- ½ cup sprinkles
- 1 teaspoon vanilla
Instructions
- Mix together *pancake mix and water. Make sure large lumps are stirred in well. *See notes below
- Mash banana.
- Stir banana in the mixed pancake batter.
- Stir in vanilla.
- Fold in sprinkles.
- Scoop out about ¼-1/2 cup of pancake batter on a lightly greased griddle. Cook on a griddle or pan on the stove over medium heat (about 375℉).
- Cook the pancakes until bubbles start to form, about 1 ½-2 minutes. Flip the pancakes over and cook for another 1 ½-2 minutes.
- After completed, top pancakes with toppings, if desired, such as bananas, whipped cream or more sprinkles.
