- Flour - all purpose
- Baking soda - this is what gives this bread its name and helps the rise

- Salt
- Cream of tarter
- Buttermilk or Sour milk - more on sour milk below
- Butter - for the top of the bread
How to make sour milk
When recipes like this one call for buttermilk or for these buttermilk pancakes, and you don't have any on hand, don't worry, I have a way around it for you.
Using sour milk instead of buttermilk works in a pinch. To make sour milk, simply add the amount of milk needed to a measuring cup, then add 1 tablespoon of vinegar or lemon juice to the milk and let sit for a few minutes. The milk will get a little chunky. That is fine and perfectly normal.
If your recipe calls for a lot of milk, 2 cups or more, adjust the vinegar or lemon juice accordingly.
How to make Irish Soda Bread
First, mix the dry ingredients together. Then, using a fork, add in the buttermilk or sour milk and mix until completely moistened.
Don't overmix. Mix together until all ingredients are mixed well together.
If you need to add a little more milk, you can.
Kneading this bread
This bread just needs a little kneading. Nothing crazy, I promise. Place it on a lightly floured surface and knead it enough until the bread is smooth and is holding together. The key is to shape the dough into a circle.
Marking the bread
The bread is going to need a "x" or a cross on the top of the bread to encourage cooking. Don't make the mistake I did at first and cut too deep. You only need to cut about ¼ to ½ in deep.
Bake
Bake the bread in a 375 degree oven for about 30 minutes. I like to take the bread out after 30 minutes and spread melted butter over the top and bake a little bit more, about 5 minutes or until the bread is nice and golden.
Storing leftovers
Wrap any leftovers with plastic wrap and store it on the counter for up to three days. Make sure it isn't sitting in any sunlight.

Until you get really good at this bread, I can almost guarantee it will come out of the oven a little different each time. That's okay. It still tastes the same regardless of how it looks.

Irish Soda Bread

Ingredients
- 4 cup flour all purpose
- 1 Tablespoon baking soda
- 1 Tablespoon sugar
- 2 ½ teaspoon salt
- ¼ teaspoon cream of tarter
- 1 ½ cup buttermilk or sour milk
- 1 Tablespoon butter melted
Instructions
- Preheat oven to 375℉.
- Mix together all dry ingredients in a large bowl.
- Add in sour milk or buttermilk and mix in with a fork until completely moistened. Don't overmix.
- Spray a baking sheet with cooking spray.
- Take the dough and place it on a lightly floured surface. Kneading carefully and lightly until the dough is smooth and together. Form in a circle.
- Place on the baking sheet and flatten dough into a 7 inch circle using your hands.
- Take a knife and mark an x or cross on top of the dough only going about ¼ inch deep.
- Bake for 30 minutes.
- Remove from oven and spread melted butter on top of the bread. Place bread back into the oven for another 5 minutes or until the top is a light golden brown.
- Remove from oven and let cool for about 20 minutes. Serve and enjoy.
