    Classic Pico de Gallo

    A traditional Mexican salsa recipe, this Classic Pico de Gallo in only 6 ingredients. It is so easy as it is a chop, dice and mix type of recipe so it comes together easily. It is such a great side for many popular dishes!

    Oh, this is a keeper of a recipe! Classic Pico de Gallo or otherwise known as "Mexican Salsa" is loaded with onions, tomatoes and cilantro with a splash of lime. It is easy to make and serves well with chips or bread. It also goes great on chicken or fish.

    Pico de Gallo would also go great to serve alongside Pork Carnitas or Easy Mexican Hamburger and Rice. It would compliment both dishes and the flavors would shine.

    Ingredients

    • tomatoes - Roma is preferred
    • onion - sweet onion
    • cilantro
    • sea salt
    • jalapeno peppers
    • lime juice - freshly squeezed or from concentrate

    Adaptions

    What is extra nice about this recipe is the way to adapt to your tastes. If you like it with a little more kick, keep in the jalapeno pepper seeds. If you don't, leave them out. A yellow or white onion can be used verses a sweeter purple onion.

    Does cilantro taste like soap to you? It does to me. Cilantro is a must in this recipe, however if it tastes like soap to you, then it won't do you much good to have it in the Pico de Gallo. So, it must be omitted. Be sure to use it if you can!

    Using a food chopper

    My youngest son gave me a food chopper for Christmas this past year and it is so handy to have for food like this. The onions and tomatoes can be chopped by hand however I chose to use the food chopper. With only a few spins of the blades, the chopper cuts through the produce and the work is done.

    Be sure to note that the tomatoes do get a little less firm if you use the chopper instead of chopping by hand. However, it still works well and I was pleased with the results.

    Refrigerate

    It is important to let the flavors blend for a while in the refrigerator before serving. The Pico de Gallo would taste good without refrigeration but it will be excellent with a little patience. The wait will be worth it! The flavor of the lime and salt will have time to mingle with the tomatoes and onions. It is best for refrigerate for at least an hour.

    FAQ

    How should I store this?

    This needs to be stored in an airtight container. It is important the onions stay sealed so the refrigerator doesn't smell like onions.

    Can I use lime concentrate instead of fresh lime juice?

    Yes, fresh is best. However if you have lime concentrate, that works well too!

    Can I use other types of tomatoes?

    Yes, any type of fresh tomatoes will work. Do not use canned tomatoes.

    Equipment

    • 1 food chopper optional
    • 1 cutting board

    Ingredients

    • 6 tomatoes Roma
    • 3 Tablespoons jalapenoes seeds removed
    • ¾ cup purple onion about ½ of a large onion
    • 2 tablespoon lime juice
    • 2 teaspoon sea salt
    • 2 Tablespoon cilantro chopped

    Instructions

    • Chop tomatoes, onion, cilantro. Add to a medium bowl.
    • Chop jalapeno and remove seeds, if desired. Removing the seeds will result in less heat. Be sure to wash your hands and chop carefully, don't touch your face while chopping peppers.
    • Add jalapenos to the bowl.
    • Stir in lime juice and salt.
    • Place in an airtight container and set in fridge for at least an hour so flavors will blend.
    • Serve with chips or bread.
