Every year, our family tries to go on family vacations. We enjoy spending time as a family and seeing new places is always a highlight. However, we have six people in our family. Vacations can get quite expensive. Quickly.
I always look for ways to keep our costs down and one of the ways is to rent a condo or house and prepare our meals there instead of eating out. I know, who wants to cook while on vacation, right?
Well, it isn't as hard as one would think. The key is to plan easy meals and prepare as much as you can at home before vacation even starts.
One such recipe is Easy Mexican Hamburger and Rice. It only has 5 ingredients (if you don't count the cheese garnish!) and can easily be prepared while on vacation. This recipe is served over tortilla chips or on a flour tortilla and is filling and delicious!

How To Travel With Easy Mexican Hamburger And Rice
It helps to prepare the hamburger at home then take it with you on vacation.
After cooking the hamburger and peppers, let it cool for about 5 minutes then place in a bag and seal it. Make sure the bag is flat. It will travel easily in a cooler though make sure the cooler is at a proper temperature for keeping the hamburger frozen. You could always add more ice as you travel.
Before you leave on your trip, go to Walmart and pick up the Success® Boil-in-Bag rice. I used Success® Boil-in-Bag White Rice and Success® Boil-in-Bag Jasmine Rice in the recipe.

How to make Easy Mexican Hamburger and Rice
Place the hamburger in a frying pan. You will want to use a large pan. The cooked hamburger and peppers can still be frozen or it can be thawed in the fridge prior to cooking. Add tomato sauce and cook on low, stirring occasionally.
In the meantime, cook Success® Boil-in-Bag Rice according to package directions. (No measure, no mess!) After the rice is done cooking, stir it in the hamburger mixture. Easy Mexican Hamburger And Rice
Ingredients
- 2 cups Success(R) Boil-in-Bag White Rice You can also use Jasmine or a combination of the two
- 1 ½ lb hamburger cooked until no longer pink
- 6 oz tomato sauce
- 2 tablespoons taco seasoning
- ½ cup orange and yellow peppers chopped
- ½ cup cheddar cheese optional
- ½ cup sour cream optional
Instructions
- Cook hamburger until no longer pink. Drain any grease and return to pan
- Add taco season and mix well. Add chopped peppers and cook on medium/low for 5 minutes
- Add in tomato sauce and stir
- Cook on medium/low for 5 minutes
- Meanwhile, cook Success(R) Boil-in-Bag Rice according to package directions
- Drain water and add rice to hamburger mixture. Stir well and cook for another 3-5 minutes
- Serve over tortilla chips or as a burrito in a flour tortilla. Garnish if desired
