Creamy, cheesy and simply warm and tasty, this Cheesy Hamburger Potato Casserole is the ultimate comfort food. There are only a handful ingredients in this recipe and bakes in the oven. The house will feel warm and your belly's will be full.
This casserole pairs well with a dinner roll or a loaf of Oatmeal Bread for more comfort food ideas. This casserole would also be great to take to someone who needs a meal. Like a new mom or someone who has been sick. Potato dishes are usually very well received.

- ground beef
- potatoes - russet works well, so would a golden potato
- cream of mushroom soup
- bacon - cooked and crumbled or you can use bacon bits
- cheese - I used cheddar and mozzarella

Can I make this casserole ahead of time?
Yes, you absolutely can! I prepped this in the morning after the kids went to school, then baked it at supper time. The only thing to be cautious of is the potatoes turning brown after being cut, like apples do.
To help with that, place the cut and sliced potatoes in a pot of cold salted water while the hamburger is cooking and you are prepping all of the other ingredients. When it is time to add the potatoes, drain the water and pat the potatoes dry. That should help the potatoes from turning brown.

Should I slice or chop?
Growing up, we would always have sliced potatoes in any casserole. You know, the peeled sliced very thin type of potatoes. I have come to appreciate the heartiness of a chopped potato, one that is cut in chunks. Honestly, in this potato casserole recipe, either will work. A chunk potato will take slightly longer to cook. We like our potatoes cooked very well so we make sure it is in the oven a long time.

Bake
Bake in a 400 degree oven with foil on top of the casserole dish. I also don't add the cheese until about 20 minutes before it is set to be done. That way the cheese doesn't get over cooked, as this casserole can take a while to get the potatoes all the way cooked.

Cheesy Hamburger Potato Casserole

Ingredients
- 6 Russet potatoes peeled and chopped into chunks
- 21 oz cream of mushroom soup
- 1 ½ lbs ground beef cooked and grease drained
- 2 cups cheddar cheese or a combination of mozzarella and cheddar
- 2 teaspoon salt
- 2 teaspoon pepper
- 1 teaspoon garlic powder
- 1 cup bacon cooked and crumbled or you can use bacon bits
Instructions
- Preheat oven to 400℉.
- Grease 9x13 baking pan with cooking spray.
- Wash, peel and chop potatoes into chunks. Place in a bowl of cold salt water. Set aside.
- Cook hamburger (adding the salt, pepper and garlic powder) until no longer pink over medium heat. Drain grease.
- Drain water from potatoes and pat the potatoes dry. Return the potatoes to the bowl and stir in the cream of mushroom soup. Place the potatoes on the bottom of the greased pan.
- Sprinkle the bacon evenly over the top of the potatoes.
- Layer the cooked hamburger on top of the bacon.
- Cover with foil and bake for 40 minutes. Carefully remove foil, be watchful of steam, and add the cheese on top. Return to oven and bake for 10-20 minutes more or until potatoes are soft.
- Remove from oven and serve.
