Cheesy Egg O'Brien Casserole a great breakfast casserole for guests or for your family. Only a handful of ingredients and has the perfect cheesy goodness in every bite.
Have you ever been invited to a brunch or gathering and needed to bring a breakfast dish? I have and when they would tell me "breakfast casserole", I really didn't have a good one to pull from.
So, I wanted to change that. This Cheesy Egg O'Brien Casserole would be great to take to such a gathering. It would also be great for a special breakfast at your house.
This breakfast recipe only has a few ingredients and it is so simple to make.
What are the ingredients in this potato egg casserole?
The ingredients are very simple. I bought O'Brien hashbrowns at Kroger while on sale. The hashbrowns are chunks, not shredded potatoes and it comes with chopped peppers and onions. You can certainly use regular hashbrowns and just chop your own veggies.
I went the simpler way.
This casserole also has eggs and heavy cream in it. Pretty simple, right?
Can I make this cheesy egg o'brien casserole on the go?
I know that most of my recipes are on the go recipes, but as simple as these ingredients are, it isn't in your best interest not to plan ahead with this casserole. It takes about 1 hour to cook all the way through.
The eggs take a little time to firm up and you want the potatoes to be soft.

Add the O'Brien potatoes to a large bowl and add 1 cup of cheese on top. Set aside.
Pour milk into a small bowl and whisk in eggs. Pour over top of potatoes in large bowl. Pour into a greased 8 or 9 inch square baking dish.

Cheesy Egg O'Brien Cassrole
Ingredients
- 5 cups O'Brien Hashbrown Potatoes frozen
- 5 eggs
- ⅔ cup heavy whipping cream you can use regular milk
- 1 cup cheddar cheese
- 2 teaspoon salt
- 1 teaspoon pepper
Instructions
- Add potatoes and cheese to a large bowl, set aside
- Pour heavy cream in small bowl and whisk in eggs
- Pour over potatoes and cheese and mix well
- Pour mixture into a greased 8 or 9 inch square pan
- Bake at 400* for 1 hour until eggs are firm
- Remove from oven and let set for 10 minutes. Serve

I'll definitely make this again. Honestly, i made this the day after Christmas so it wouldn't ruin the holiday morning if it was a fail, and I should've just gone ahead and made it for yesterday because it's so good! Turned out perfect.

Can I prepare this the night before and bake the next morning?

I never made this particular casserole the night before so I can't speak directly on it. However, I have made other potato casseroles and they have been fine. The only thing would be to check to make sure while baking the casserole doesn't get too dry, as the ingredients have had time to soak into the potatoes overnight.

If you cheddar cheese you do not need to add salt to the mix. Since the cheese has enough salt in it already.

Well I suppose that is a matter of preference. I think it needed a bit of salt but if you don't feel it needs any, you can omit the salt.

How would you go about doubling this? Reduce the temp to 375 and increase cooking time to an hour and a half maybe?

Made this for Father's Day Brunch. Great flavor profile. Added chopped ham, mushrooms and spinach to the mix. Prepared the casserole the night before and baked the next morning. By adding the additional ingredients I should have added 1 or 2 additional eggs. Definitely will add this to my breakfast rotation

Are the potatoes thawed or frozen?

They can be either. I simply pulled them from the freezer and put them in the casserole.
