Cheesy Egg O'Brien Casserole is a great breakfast casserole because not only of the simple design of the recipe but because the soft potatoes combined with the eggs and bacon makes a breakfast casserole everyone will love. Only a handful of ingredients and it has the perfect cheesy goodness in every bite.

The amount of taste and texture in this Cheesy Egg O'Brien Casserole sets it above most egg recipes. The peppers and onions that come with the O'Brien potatoes add such flavor. The bacon adds the smokey taste we all love.
Have you ever been invited to a brunch or gathering and needed to bring a breakfast dish? I have and when they would tell me "breakfast casserole", I really didn't have a good one to pull from. So, I wanted to change that. This Cheesy Egg O'Brien Casserole would be great to take to such a gathering. It would also be great for a special breakfast at your house.
We have a few other egg casserole to choose from, like Cheesy Egg Bake and Cheesy Sausage Egg Hashbrown Casserole. Cheesy Egg Muffins are delicious too!
Ingredients
The ingredients are very simple. I bought O'Brien hashbrowns at Kroger while on sale. The hashbrowns are chunks, not shredded potatoes and it comes with chopped peppers and onions. You can certainly use regular hashbrowns and just chop your own veggies.
- O'Brien Hashbrown Potatoes
- eggs
- cheddar cheese - Colby Jack is good too
- heavy whipping cream - can use milk or almond milk instead
- bacon

Is this a quick recipe?
I know that most of my recipes are on the go recipes, but as simple as these ingredients are, it isn't in your best interest not to plan ahead with this casserole. It takes about 1 hour to cook all the way through. The eggs take a little time to firm up and you want the potatoes to be soft.
If you are planning to take this breakfast egg casserole somewhere, be sure to give yourself plenty of time.

Bacon or sausage
For this casserole, either bacon or sausage will work. I chose to use bacon this time as I wanted a more smokey flavor than the spicy of the sausage. However, either works very well. Be sure to drain the grease completely from both before adding it to the recipe.

- cooked ham
- asparagus
The O'Brien hashbrown potatoes already has the onions and green peppers with the potatoes, if desired you could add more.

Cheesy Egg O'Brien Cassrole

- 1 9 inch square baking dish
Ingredients
- 28 oz O'Brien Hashbrown Potatoes frozen
- 5 eggs
- ⅔ cup heavy whipping cream you can use regular milk or almond milk
- 4 strips bacon cooked
- 1 cup cheddar cheese
- 2 teaspoon salt
- 1 teaspoon pepper
Instructions
- Preheat oven to 400℉.
- Place potatoes in a greased 8 or 9 inch square baking dish sprayed with cooking spray.
- Fry bacon on stove until crisp. Drain grease. Crumble bacon.
- In a small bowl, whisk eggs. Pour in cream (or milk), salt, pepper and stir.
- Pour over potatoes. Place crumbled bacon on top. Then sprinkle cheese on top.
- Cover with foil.
- Bake at 400℉ for 1 hour until eggs are firm. You can remove foil after 45 minutes to let the cheese brown slightly if desired.
- Remove from oven and let set for 10 minutes. Serve.

This casserole was a big success! My husband and I are spending some extra and quality time with his folks helping out and tending to any of their needs. I'll definitely make this again. Honestly, i made this the day after Christmas so it wouldn't ruin the holiday morning if it was a fail, and I should've just gone ahead and made it for yesterday because it's so good! Turned out perfect.

Can I prepare this the night before and bake the next morning?

I never made this particular casserole the night before so I can't speak directly on it. However, I have made other potato casseroles and they have been fine. The only thing would be to check to make sure while baking the casserole doesn't get too dry, as the ingredients have had time to soak into the potatoes overnight.

If you cheddar cheese you do not need to add salt to the mix. Since the cheese has enough salt in it already.

Well I suppose that is a matter of preference. I think it needed a bit of salt but if you don't feel it needs any, you can omit the salt.

How would you go about doubling this? Reduce the temp to 375 and increase cooking time to an hour and a half maybe?

Made this for Father's Day Brunch. Great flavor profile. Added chopped ham, mushrooms and spinach to the mix. Prepared the casserole the night before and baked the next morning. By adding the additional ingredients I should have added 1 or 2 additional eggs. Definitely will add this to my breakfast rotation

They can be either. I simply pulled them from the freezer and put them in the casserole.
