The chicken
The recipe is here for the Slow Cooker BBQ Chicken. You can use your favorite recipe for this, but this is one we love and use often! The chicken recipe is simply BBQ sauce, Dr. Pepper and chicken so it doesn't get much easier. And the best part? It is one time cooking for two suppers!
Cooking the tortilla
I like using a square pan for recipes such as this, however a regular frying pan works well. I feel it is easier to work with in a square pan.

The cheese will be placed on the tortilla while the tortilla is browning so the cheese will melt. Then the chicken will go on next (on half of the tortilla). The tortilla will be folded over and cooked the rest of the way.

What to serve with the BBQ Chicken Quesadilla

- salsa
- jalapeno peppers
- lettuce
- cheese dipping sauce

The quesadilla is crunchy with the melted cheese and smokiness of the BBQ flavor. This supper recipe is great for those busy nights and is a great on the go recipe. It also uses up leftovers. It's a win/win!

I have never tried corn tortillas however, I think the flour would work better. Gluten free tortillas can be used.
Yes! Place the jalapeno peppers on the cheese while cooking.

BBQ Chicken Quesadilla

- 1 square frying pan optional, a regular frying pan works too.
Ingredients
- 4 flour tortillas
- 2 cups BBQ chicken
- 1 cup shredded cheese Mexican, Cheddar or Colby Jack
Instructions
- Spray cooking spray on a frying pan. Heat up frying pan over medium heat for 2 minutes.
- Place 1 tortilla on frying pan and add cheese to ½ of the tortilla. Let cook for 2 minutes, taking care not to burn the tortilla. The tortilla should start to turn golden brown.
- Add the BBQ chicken on top of the cheese and fold the tortilla over.
- Let cook on one side for 1-2 minutes then carefully flip the tortilla over and cook on the other side for another 1-2 minutes.
- Place tortilla on a plate and cut in half. Repeat with remaining tortillas, or use as just a single serving! Serve.
