The flavors of cinnamon, nutmeg and cloves just say fall, wouldn't you agree? What a lovely blend of ingredients, especially when apples are added. Then to add a lemon glaze on top, it just brings out the flavor blend perfectly. Apple Oatmeal Cookies are soft and tastes just like fall.

What apples to use
For this recipe, we used Honeycrisp. Honeycrisp is a sweeter apple. I had bought some to make Crock Pot Applesauce so we had apples to use up. Granny Smith is a tart apple and would fit nicely in this fall cookie recipe. A Gala apple would be great as well. Do you need an apple guide? Brown butter lemon glaze
This is the same frosting that we put on our Applesauce Cake. The blend of lemon with apples and cinnamon just works. They compliment each other nicely so why wouldn't we put the frosting on these apple cookies? Just a little needs to be made as it is just drizzled on the cookies.

Using a stand mixer
It is best with this recipe to use a stand mixer or hand mixer to cream together the butter and sugars. Then the other ingredients are added. It helps to make sure everything is blended well. Of course, make sure the butter is softened to room temperature before blending and that helps everything come together.

FAQ
Yes! I wouldn't add the glaze to the cookies before you freeze them. I would put the cooled cookies in a freezer safe container then freeze for up to 3 months. When you are ready to serve them, then put the glaze on them.
Be sure to use gluten free oats and gluten free flour 1 to 1 flour. It works well.
I don't recommend it. I haven't tested it but it would make the cookie quite crumbly.

Apple Oatmeal Cookies

- 1 stand mixer or can use a hand mixer

Ingredients
- 2 cups old fashioned oatmeal
- 1 ¼ cup all purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 ½ teaspoon cinnamon
- ½ teaspoon ground cloves
- ¼ teaspoon nutmeg
- ½ cup butter softened
- ½ cup sugar
- ½ cup brown sugar
- 1 egg yolk
- ⅓ cup unsweetened applesauce
- 1 cup apples peeled and chopped well
Brown Butter Lemon Frosting
- ¼ cup butter
- 1 cup powdered sugar may need a bit more, see note below
- 2 tablespoon lemon juice
Instructions
- Preheat oven to 350℉.
- In the bowl of the stand mixer, add the softened butter and sugars. Cream together until blended well.
- Add the applesauce, egg yolk, vanilla and blend together well on medium speed.
- Add the dry ingredients (oatmeal, flour, spices, baking soda and salt) to the bowl, then mix together just until blended.
- Fold in the apples.
- On a cookie sheet, scoop up the dough using a medium cookie scoop. Make sure the cookies are spaced at least 2 inches apart for best results.
- Bake at 350℉ for about 15 minutes until the cookies are set. Remove from oven and let cool. After about 5 minutes move to a cooling rack.
Brown Butter Lemon Glaze
- In a small saucepan, melt the ¼ cup of butter, over medium low heat, stirring often. Let the butter cook, simmering while stirring, until the butter starts to darken slightly.
- Remove from heat and whisk in the powdered sugar. Add the lemon juice.
- Drizzle glaze over cooled cookies.
- Serve.
