We all have those nights, don't we? The nights where everyone is in 6 different directions and all you want to do is gather your family around the table to eat dinner, talk and be a family. Quick easy supper recipes are important for busy moms and busy families.
I know how crazy life can be. I know have a 15 year old, 11 year old, 8 year old and a 5 year old. They are all in school (except Caleb who is homeschool kindergarten with me) and the after school activities are keeping us hopping, not stopping.
The other day (or should I say week?!?) I was so busy and exhausted the thought of making a big meal was daunting to say the least. Our dishwasher is broken as well so every dish I dirtied, I had to wash by hand. And when you are exhausted anyway, the last thing you want to do is stand over a sink.
Yes, my children help wash dishes. But I must admit, I have a hard time asking them to when they have homework and regular evening activities to take care of.
Ya know?
Life is busy, Ladies. As moms we try to balance it all, juggle it all and sometimes it is just plain hard. I know at the end of a busy day, I just want to sit down at the table with my family and talk about our day.
So forget the big fancy supper. Who needs a 5 course meal? As long as bellies get filled and healthy foods are prepared, I don't need to fix roasted lamb on mint jelly with bacon wrapped asparagus sitting by wild rice and carrots.
I think I will stick with the 4 ingredient casseroles and under 30 minute meals. Who's with me?

Taco Soup-Hello, throw in the crock pot and walk away. Takes about 3 minutes to prepare and hours to cook while you are watching the cross country race. Or baseball game. ;-)
Easy Cheesy Broccoli Chicken Casserole-Easy and cheesy. Yum.
Grilled Pizza on a Stone-This one takes a little more effort, but maybe on those days where you have a little more time for supper. So delicious!
One Dish Chili Noodles-one dish easy recipe the family will love! Like a Chili Mac and made in one pan. Little mess, little fuss!
Italian Tortellini Salad-Whip this up for a side. Or really, it could be a meal. Flavorful and scrumptious!
