This Easy Homemade Strawberry Shortcake is not like the kind you buy at the store. But it is delicious and made with ingredients you probably already have in your pantry. How easy is that?
Do you grow fresh strawberries at your house? We do. We started with a patch at our Little House On The Prairie. The strawberries were so easy to grow so when we moved, we knew we wanted to start a patch here.
Unfortunately, we don't have much open spaces for a garden at this house. We have almost as much land, but most of it is taken in trees, tree roots and pond. Anyway, we made a patch near our front door (edible landscaping) and now we can enjoy fresh strawberries all the summer long. Well, for about 3 weeks, anyway. ;-)
Whether or not you have your own strawberry patch, really doesn't matter. In fact, this recipe would be great with whatever strawberries you find at the store. (On sale, of course!)
All you need are a few ingredients for the cake part of the strawberry shortcake and some whipped cream and you have a fresh, summertime dessert for the family.
Easy Homemade Strawberry Shortcake
As with most pastries or biscuit type dough, you need cold butter to make the recipe shine. If you are like me, I can not have real butter so margarine will have to do. I find it doesn't works *AS* well as real butter, but a gal has to do what a gal has to do.
If you have a basic staples in your house such as flour, baking powder and sugar, you have the ingredients for the shortcake. It also bakes quickly.
I made my recipe and put it in a jelly roll pan. I have quite the hungry crew to feed so you can half this recipe and place it in a square 9 inch pan.

Easy Homemade Strawberry Shortcake
Ingredients
- ½ cup sugar
- 4 cups flour
- 4 teaspoon baking powder
- 2 sticks butter
- 2 eggs
- 1 ½ cups milk
- whipped cream
- strawberries, cut and stems removed
Instructions
- Mix together the flour, sugar, baking powder in a large mixing bowl
- Cut in the butter until the mixture is like crumbs
- In a small bowl, mix together eggs and milk
- Stir the milk mixture in the flour mixture
- Spread in a greased jelly roll pan
- Bake at 400* for 10-12 minutes or until cooked through
- Remove from oven and cool
- Using a biscuit cutter or another circle dough cutter, cut out circle shaped shortcakes
- Layer one shortcake, whipped cream, strawberries, then another shortcake. Spread whipped cream on top of shortcake and garnish with another strawberry
- Serve
