My husband also expects a good, filling meal to help him get through the late nights of studying, tests and papers. It is my goal to have a meal on the table quickly. This meal also has to be healthy and nutritious. That is when recipes like Mexican Pork Chop Casserole come in handy.
Mexican Pork Chop Casserole
Mexican Pork Chop Casserole is very easy to make with only a handful of ingredients. The ingredients are also very versatile and you can put in different types of peppers or add onions if you would like. This casserole is so simple to put together. (Perfect for that busy weeknight!) I want to gather my family around the table despite our busy lives. Easy recipes which are made in 30 minutes or less are the key to mealtime success.
Take the Smithfield All Natural Boneless Pork Chops and cut them into bite sized pieces. Cook them over medium heat with 2 Tablespoons olive oil until cooked through.
The cooked Smithfield All Natural Boneless Pork Chops, tomatoes with chili’s and rice
Place ingredients in a greased casserole dish and mix well. You could place all the ingredients into a bowl to mix it but I would rather mix it in the dish. Saves on washing dishes, you know. 😉
Add cheese and bake for 15 minutes or until casserole is heated through and cheese is melted.
Serve with sour cream, if desired. You can even sprinkle with green onions or chives.

Part of making meals for a large family is having leftovers for the next day’s lunch! My oldest Ryan used the Mexican Pork Chop Casserole to make a taco. He loved it!
Simply warm up the leftovers and place in a flour tortilla. Add hot sauce, sour cream or extra cheese if you desire.
Mexican Pork Chop Casserole
- 1 package Smithfield All Natural Boneless Pork Chops
- 1 1/2 cups uncooked rice
- 3 cups water
- 1 can (12 oz) diced tomatoes with chili's
- 1/2 cup chopped red peppers
- 1 cup shredded cheddar cheese
- 2 T taco seasoning
- Cut Smithfield All Natural Boneless Pork Chops in bite sized pieces and place in frying pan, coated with 2 T olive oil
- Cook on medium heat until cooked through and no longer pink
- Sprinkle 2 T taco seasoning onto Smithfield All Natural Boneless Pork Chops
- Meanwhile, boil 3 cups of water and rice on stove. Reduce heat and let simmer for 10 minutes until rice is cooked and fluffy
- Mix rice, tomatoes (with juice), Smithfield All Natural Boneless Pork Chops, peppers in a greased 9 quart square baking dish
- Sprinkle with cheese
- Bake in a 375* oven for 15-20 minutes or until heated through
