    Fritos Corn Salad

    Fritos Corn Salad is a fun and simple corn salad recipe with flavor, crunch and lots of personality. This salad is great for a family dinner or for a potluck!

    We all need a good salad recipe. This Fritos Corn Salad packs a big flavor punch with the green peppers, onions and Chili Cheese Fritos (corn chips). It is so easy to make and to make ahead of time for a gathering or potluck. This corn salad would be great for picnics or BBQ's as well!

    Corn side dish recipes are a favorite around here like Fried Corn Salad, Fried Corn With Bacon and Fried Parmesan Corn. This corn salad uses canned corn however frozen corn is used in a lot of salads, like the ones mentioned above.

    Ingredients

    • corn - canned not frozen
    • red onion
    • green pepper
    • salt
    • Chili Cheese Fritos
    • cheddar cheese
    • mayonnaise - can use Miracle Whip

    Corn chips

    The corn chips (Fritos) are up to you. Chili Cheese Fritos gives this recipe the extra pep it needs. However, if you want a little milder flavor, then regular Fritos are good too. It is important to not mix in all the Fritos before you let the salad chill in the refrigerator. The corn chips can get soggy.

    Mixing the salad

    The salad is mixed together so easily. The corn needs to be drained before you add it to the mixing bowl. Then the vegetables are added.

    Then the mayonnaise, salt and cheddar cheese is added in. Cheddar cheese works best for this recipe, I wouldn't recommend a different type of cheese. You can use already shredded cheese or shred your own.

    Chill time

    The Fritos Corn Salad needs to be kept in the refrigerator for at least 4 hours. As mentioned above, don't mix in all of the Fritos, then refrigerate. It is best if you mix half in (they should be crushed), then chill.

    After the salad has chilled and right before serving, mix in the rest and let some rest on top. I like to keep those Fritos whole for appearance reasons, but it doesn't matter if you crush them as well or not.

    Equipment

    • 1 mixing bowl
    • 1 salad bowl
    • 1 cutting board

    Ingredients

    • 3 cups Chili Cheese Fritos crushed
    • 45.75 oz canned corn 3 cans - drained
    • 1 cup mayonnaise can be Miracle Whip
    • ½ cup red onion chopped
    • ½ cup green pepper chopped
    • 1 cup cheddar cheese shredded
    • pinch salt

    Instructions

    • Drain the corn and place corn in a mixing bowl.
    • Stir in onions and green peppers.
    • Stir in mayonnaise, cheddar cheese and salt.
    • Fold in 1 cup crushed Fritos.
    • Chill for 4 hours. When ready to serve, stir in 1 ½ cup crushed Fritos.
    • Sprinkle ½ cup of Fritos on top, crushed or whole.
    • Serve

    Notes

    • You can use regular Fritos instead of Chili Cheese, if preferred. 
    • Miracle Whip can be used in place of mayonnaise.
    • This recipe calls for 3 cans of corn.
