Making recipes with in season fruit is the perfect way to enjoy the bounty of season. Besides, what says summer more than tropical popsicles? Pineapple juice mixed with strawberries and vanilla pudding. That calls for delicious summertime fun!
This recipe is a lot like the Orange Julius. A blend of fresh flavors that work together well! These strawberry popsicles are delicious and great for summer too!

Ingredients
- strawberries - stems removed and sliced thin. This slicer works well for strawberries.
- pineapple juice concentrate - thawed
- instant vanilla pudding - not cook and serve
- unsweetened almond milk - you can use regular milk

Instructions for Tropical Popsicles
The instant pudding needs to be mixed first and it won't thicken up like normal pudding. That's okay, you don't want it to! The pudding mix, milk and pineapple juice will be mixed together and you will let it sit for 3 minutes.
The mixture will be poured into the popsicle molds. The strawberries will then be added.
Substitutions
The almond milk can be substituted for regular milk. If you do, you may want to add a dash of vanilla for a little extra vanilla flavor.
Variations
Want to add a little more flair?
- Orange juice - instead of pineapple
- Kiwi - use kiwi in place of or in addition to strawberries
- Coconut - add shredded coconut to the popsicle mixture
Storage
These popsicles need to be kept frozen. They can be kept frozen for up to two weeks, covered.
Top tip
Sometimes popsicle molds come with sticks and sometimes they don't. I like to use old fashioned popsicle sticks. However, they will fall to the side if you place them in the molds to earlier. To prevent that, let the popsicles freeze for an hour, then place the sticks in the popsicles. The popsicles will be frozen enough to keep the sticks in place.

Tropical Popsicles
Equipment
Ingredients
- 6 oz pineapple juice concentrate thawed
- ½ cup almond milk with vanilla
- 5 strawberries stems removed and sliced
- 3.5 oz instant vanilla pudding
Instructions
- Whisk dry pudding mix, milk and pineapple juice in a large bowl for 2 minutes.
- Set aside for 3 minutes. Pudding will not thicken like normal.
- Pour into popsicle molds.
- Put 1-2 strawberry slices in each mold with pudding mix.
- Place in freezer for one hour. After an hour, put popsicle sticks in the tropical popsicles.
- Freeze for at another 3 hours.
- Serve.
