These peanut butter chocolate chip oatmeal cookies have loads of chocolate flavor plus the sweetness of raisins mixed together. These delicious cookies are a bit crumbly, but that makes them even better in my opinion. Why? Well, they can top fruit of course.

I have a bunch of these sitting on my island right now. If I was a carefree, wild and crazy kind of gal, I would eat about 10 of these Peanut Butter Chocolate Chip Oatmeal Cookies. But since I am sensible, I will limit myself to the one that had before lunch.
That's right, before. Don't judge.
These cookies don't have flour in them. They are made with oatmeal. As I mentioned above, they are a bit on the crumbly side.
I am not personally bothered by that as I will eat any cookie of any kind. That said, if you are bothered by the slight crumby-ness of this oatmeal cookie recipe, you can certainly add about ¾ cup of flour to help stick them together.
Or, you could crumble them on top of strawberries and grapes like I did last night. Caramel topping was also calling my name, but I held tight to just the peanut butter chocolate chip oatmeal cookies. Whipped cream would probably be rather delightful as well.
Peanut Butter Chocolate Chip Oatmeal Cookies
They are made on the stove top if you can believe it. At least the first part needs to be cooked together. That said, by the time you add in the chocolate chips, the batter is warm so the chocolate chips slightly melt. How yummy is that?
The recipe is easy to make and you probably have the ingredients in your pantry. It makes quite a few cookies so freeze away to help feed those hungry teenagers!

Peanut Butter Chocolate Chip Oatmeal Cookies

- ½ cup butter
- 1 ½ cup brown sugar
- ½ cup sugar
- 3 eggs
- 1 ½ cup chunky peanut butter
- 6 cups oatmeal
- 2 teaspoon baking soda
- ¾ cup raisins
- 1 cup semi sweet chocolate chips
Instructions
- Melt butter in a large saucepan
- Over low heat add in brown sugar, white sugar, eggs and peanut butter. Mix well
- Remove from heat and add in oatmeal, baking soda, raisins and chocolate chips
- Grease cookie sheet and place 1 ½ inch balls of dough on sheet
- Press dough slightly on uncooked dough with spatula
- Bake at 375* for 12-16 minutes
- Place on cooling rack when done
