    Golden Cookies And Cream Lemon Bars

    Delicious golden cream filled cookies layer in this cream cheese and whipping cream topping. It all sits on a lemon bar base for these Golden Cookies And Cream Lemon Bars. A simple dessert.

    Never, ever underestimate the clearance aisle at any store. Like the post I put on Instagram yesterday. Good things can come under marked down labels. The golden cream cookies was such a purchase.  They were marked down to $.75.  Why, you ask?

    {I never question it, I just buy it. Including meat. That is a different story, just ask my husband.} ;-)

    When I saw the cookies on sale, I knew I could come up with something to make with it. I mean, I am a fan of all things cookie. A little bit of cookie should be in nearly everything we make, wouldn't you agree?

    Wouldn't you know, I found something to make with the cookies, the Golden Cookies And Cream Lemon Bars.

    Now, I am going to confess something here...I had never used whipping cream before. Sorry.

    I always used Cool Whip for whipped cream. Now, we are still Cool Whip fans. I mean, it's Cool Whip, ya know?  However I needed the whipping cream for the No Churn Caramel Pretzel Ice Cream I made.  Since I had some left, I thought I would use the whipping cream in the cream cheese layer. The result? Delicious!

    The lemon base is a simple lemon cake mix mixed butter and egg. The baking time is short and the dessert comes together fairly quickly.

    Golden Cookies And Cream Lemon Bars

    These golden cookies and cream lemon bars are a sweet treat that is a delight to your family or friends in this lovely dessert.
    Course Dessert

    Ingredients

    For the Base

    • 1 box lemon cake mix
    • ⅔ cup margarine , softened
    • 1 egg

    For the Cream Cheese Layer

    • 2 (8 oz) cream cheese, softened
    • 2 cups whipping cream
    • 20 golden cream filled cookies

    Instructions

    For the Base

    • Mix cake mix, margarine and egg together in a bowl
    • Spread on the bottom of a 12x18 inch jelly roll pan
    • Bake for 10 minutes
    • Let cool and set aside

    For the Cream Cheese Layer

    • Whip the whipping cream with a stand mixer or hand held mixer for 3 minutes
    • Fold the cream cheese in the whipping cream

    For the Dessert

    • Crumble 10 cookies and sprinkle on top of the lemon bars base
    • Spread cream cheese mixture over top of base
    • Sprinkle remaining cookies on top of cream cheese mixture
    • Cut into bars and enjoy
