    No Churn Caramel Pretzel Ice Cream

    No Churn Caramel Pretzel Ice Cream is simple to make. Best of all, you don't need an ice cream maker! With rich caramel and crunchy pretzels, this simple dessert just got better!

    No Churn Caramel Pretzel Ice Cream

    I see recipes for no churn ice cream everywhere.  They are on Pinterest, they are on Yummly and they are on Facebook. I really don't know why I haven't dived onto the ice cream making bandwagon, except for the fact I thought it would be more complicated than it was.

    This No Churn Pretzel Caramel Ice Cream was not complicated.  In fact, I am truly amazed at how easy it was. I will also be amazed if some is remaining in my freezer by the time this night is through, but that is a different story.

    Of course, the children are at Grandma's so there is hope. ;-)

    Of course, my ice cream loving husband is home so maybe not as much hope as I thought.

    I decided I was going to make this ice cream with caramel and pretzels because of a sad ice cream experience I had the other day. With the children at Grandma's, we took the opportunity to do a little shopping for some new garbage cans.  {Exciting stuff, huh?!?} Our cans were 17 years old and pathetic. Anyway, neither one of us had supper yet, but what else does one do when children are away at Grandma's?

    They randomly stop at an ice cream place and buy ice cream.

    This ice cream place is a favorite of ours; we have been going there for years.  It has pretty much anything you want on the menu and I spied caramel pretzel with my little eye. So I ordered and eagerly awaited my dessert.  When I got the ice cream and got a few bites into it, I realized their error.

    They forgot to mix caramel up in the ice cream.  But to make it up, they drizzled a little on top so I would think caramel was in there.  It wasn't.

    I promise I'm not bitter.

    Just sad.

    Yes, I ate my ice cream without caramel.  So when I made this no churn ice cream, I had to put in caramel and pretzels. Then when my husband took a bite I heard, "There is caramel in here too?"

    Of course, my dear.  Of course.

    Don't let the way ice cream was made in yesteryear stop you from trying out this new brilliant ice cream making idea. It is easy, there are only a few ingredients and you can add caramel if you want to. ;-)

    Ingredients
      

    • 1 can (14 oz) Sweetened Condensed Milk
    • 2 cups heavy whipping cream
    • 1-2 teaspoon vanilla extract
    • ½-3/4 cup pretzels
    • ¼ cup caramel

    Instructions
     

    • Pour sweetened condensed milk into a medium bowl
    • Fold in vanilla extract
    • Using a Kitchen-Aid Mixer or hand mixer, pour the heavy whipping cream into a large bowl and whip on medium high speed until stiff peaks form (about 3-4 minutes)
    • Transfer a small amount of the heavy whipping cream (I simply scooped some up using my spatula) and fold it into the sweetened condensed milk
    • Now slowly pour the sweetened condensed milk into the whipping cream, gently folding as you go
    • Don't over stir and fold gently
    • When the milk is incorporated, pour half into a loaf pan
    • Add the caramel and pretzels
    • Pour the rest of the mixture on top of the caramel and pretzels
    • You can swirl a knife through the ice cream to mix up the caramel and pretzels if you want to
    • Using a spatula, smooth the top of the ice cream so it is flat and smooth (as much as possible, it doesn't have to be perfect!
    • Place a piece of wax paper on top (just for freezer burn sake)
    • Freeze for at least 4 hours
    • Enjoy!
