A delicious and easy to make Strawberry Cheesecake Ice Cream Dessert is just what a summertime gathering needs. Cool, refreshing with a strong chocolate and strawberry flavor, the cheesecake bits just adds to the deliciousness of this recipe.
We enjoy ice cream desserts at our house and will make them year around, such with Grasshopper Ice Cream Dessert at Christmas or Brownie Pretzel Ice Cream Cake. Ice cream desserts are only a few ingredients and so easy to put together. A lot of time, they just need some time so planning is necessary.
Ingredients
- strawberry cheesecake ice cream - any brand
- Oreo cookies - regular or double stuffed
- chocolate ice cream topping - any brand
- margarine - or butter
- whipped cream - store brand works with this recipe

Tips for this recipe
- A food processor is handy to have to crush the Oreos. A rolling pin and a plastic bag works well, but I do enjoy using a food processor.
- Be sure to spray the pan with cooking spray so the cookies won't stick.
- No need to let the Oreo crumbs cool completely before putting the ice cream in the pan. It will go immediately into the freezer.
- It is best to let the ice cream dessert freeze overnight. That will ensure the texture and firmness is just what you will want. The cutting and serving will be easier that way too.
Baking the Oreo crumbs

The Oreos will be crushed and mixed in with melted butter. The Oreo crumbs will be pressed down on the bottom of a 9x13 pan. They will only need to be baked for about 7 minutes at 350 degrees.
The pan does not have to be completely cooled before adding in the ice cream mixture, but don't let it be piping hot either.

The strawberries can be added after freezing for garnish if you would like to. It is not necessary, but it looks pretty on top!

Additions
- Sprinkle Oreo crumbs on top
- Use Golden Oreos instead of chocolate
- Mix chopped strawberries in with the ice cream
- Use strawberry ice cream topping instead of chocolate
