These No Bake Chocolate Peanut Butter Cookies are a classic. They are well liked by how good they taste and how they don't require baking at all. They do need a stove top, but no oven required. These no bake cookies are good for a quick dessert recipe and also great for a Christmas cookie tray.

Cookies are the best dessert (in my opinion) and to have a variety of cookie options for a cookie tray is important. Cookies such as M&M Cookies, Cookies and Cream Cookies and Gooey Butter Cookies are all delicious and such great options for Christmas cookie exchanges.

    Ingredients

    • sugar
    • cocoa
    • milk - almond milk can be used.
    • margarine - margarine is preferred over butter, but butter can be used.
    • vanilla
    • salt - just a pinch.
    • peanut butter - crunchy or creamy.
    • oats - I used old fashioned oats but quick oats can be used.

There isn't any flour or eggs in this cookie recipe. It is held together by the oats, peanut butter and margarine.

    Making the no bake cookies

The stove top is needed to melt the butter and to mix in the peanut butter, sugar and cocoa. Baking cocoa is used and that has a bitter taste to it, without added sugar. So sugar is needed to help balance that out. I am thinking of trying this with honey and seeing if the taste would be about the same. I'll let you know!

    melted butter in a pan.

The butter, sugar, cocoa and milk will be heated on the stove. Once it is time to add the peanut butter, vanilla, salt and oats, the pan will be removed from the heat.

    Cooling

The mixture will need to be cooled so it will hold together. Scoop the mixture together into balls then flatten it with your hands into a cookie shape.

Let the cookies set up in the refrigerator. It will take about 1 hour. The they are ready to serve!

    Tip

The cookies can stay in the fridge to keep firm or can be left out on the counter in an airtight container.

    • 2 cup sugar
    • ½ cup milk
    • ½ cup margarine
    • 1 ½ teaspoon vanilla
    • pinch salt
    • ½ cup peanut butter crunchy or creamy
    • 3 cups quick oats

    Instructions

    • In a medium saucepan, melt margarine, stirring occasionally over low heat.
    • Mix in cocoa, sugar and milk and stir over medium heat.
    • When it starts to boil, remove the pan from the heat. Add in the vanilla, salt and peanut butter.
    • Stir in the oats.
    • On wax paper (or parchment paper), using a scoop or spoon, scoop onto the paper. Let the cookies cool in the fridge for 1 hour.

    1. To make moving the cookies easier, place the wax paper on a cookie sheet.
