    Chocolate Chip Ice Cream Bread

    Yes, you heard right. There is a bread recipe out there made of ice cream. It only has a few ingredients and it is super easy to put together. Chocolate Chip Ice Cream Bread is sweet, simple and great addition to your evening meal or for a snack. Give it a try!

    This bread is so good. I mean, it has ice cream in it so how can it not be?

    Chocolate chip ice cream bread has so few ingredients and can be whipped up in a hurry. It is a recipe that is great for breakfast, brunch or a snack. You could even have a variation of it with your evening meal.

    Ingredients

    • Vanilla ice cream
    • Flour
    • Baking powder
    • Salt
    • Sugar
    • Mini chocolate chips

    Such a small ingredients list for such great bread. You can use bleached or unbleached flour as long as it is all purpose. I haven't tried it with gluten free flour yet, so if you do, let me know!

    The vanilla ice cream

    Ice cream in bread? Yes please!

    The vanilla ice cream can be any variety of vanilla and any brand. I used plain vanilla ice cream. However, French vanilla or Vanilla bean would be great as well.

    The ice cream needs to be softened so you can stir it in easily. You do not want hard ice cream as it will make things clump and not smooth for the batter.

    You could melt the ice cream on the counter or microwave, but I have found softened on the counter works well.

    Mixing the ingredients

    Mix up the ice cream with the other ingredients.

    Mixing up the few ingredients is rather easy and you can just use a wooden spoon or mixing spoon. Make sure the bowl you are using is big enough, a medium sized bowl will work.

    This recipe will make one 9 inch loaf pan sized bread loaf. If you want to double the recipe for two loaf pans, you certainly can and it will double well.

    The chocolate chips

    I used mini chocolate chips to top this chocolate chip ice cream bread. I think they look better in baked goods such as bread, but really, you can use regular sized semi-sweet or milk chocolate chocolate chips.

    Baking

    Bake the bread at 350* for about 22-27 minutes or until firm in the middle. The bread is rather dense so don't be expecting a light and fluffy bread.

    Variations

    This is the fun part! What variations could we do? Well, you could use chocolate chip ice cream in place of the vanilla. You could also add apple bits like I did in this Apple Ice Cream Bread recipe.

    A cookies and cream ice cream with a chocolate sandwich cookie topping would be fun as well. So many options!

    Equipment

    • 1 mixing bowl
    • 1 mixing spoon
    • 1 measuring cup/spoons

    Ingredients
      

    • 3 cup vanilla ice cream softened
    • 2 ¼ cup all purpose flour
    • ⅔ cup sugar
    • 1 ½ teaspoon baking powder
    • ¾ teaspoon salt
    • ¼ cup chocolate chips mini

    Instructions
     

    • Preheat oven to 350*
    • Spray 9 inch loaf pan with nonstick cooking spray
    • Mix together flour, baking powder, sugar and salt in a medium sized bowl
    • Stir in the softened vanilla ice cream and mix well
    • Pour in the greased loaf pan and spread evenly
    • Sprinkle on the chocolate chips
    • Bake for 22-27 minutes or until top is firm
    • Let cool for 15 minutes then turn carefully out of the pan, loosening the sides with a knife
    • Slice and serve

    Notes

    Before you start the recipe, let the 3 cups of vanilla ice cream sit on the counter for about 20 minutes to soften. 
    If you find the bread batter is rather dry, you can add ¼ cup of milk to the batter.
