    A delicious Cashew Salad With Poppy Seed Dressing is a great addition way to any dinnertime meal. Have it for lunch too! Fruit and nuts, this salad has all of the delicious flavors combined.

    Who here loves a good salad? I certainly do. Especially ones that can be made and enjoyed as a side to a main dish or used as the main dish itself. Like this Cashew Salad With Poppy Seed Dressing.

    A great kitchen hack involving bacon

    This salad can be made ahead of time. If you have company coming over, you can cook the bacon early in the day or even the night before. Then pop the bacon in the fridge until ready to use.

    My favorite kitchen hack of all time is baking the bacon in the oven. No more greasy stove tops. Plus, you can put the bacon in the oven and walk away until it is done. Love it!

    How to make cashew salad with poppy seed dressing

    To put together the salad, you need mozzarella cheese, cooked bacon, red leaf lettuce, sliced grapes and cashews.

    Red wine vinegar, spices and sugar

    The dressing was a mixture of oil, sugar, red wine vinegar, poppy seeds, salt and ground mustard. Simply mix all the dressing ingredients in a blender and pour over the salad. If you are making this salad to serve later, wait to pour the dressing on the salad until right before serving. You can store the salad dressing in the refrigerator until ready to use.

    Pair this salad with 3 ingredient slow cooker shredded roast beef or a quick frozen pizza! Either way, it tastes great and goes with just about any meal.

    Ingredients
      

    • 1 head Red Leaf Lettuce
    • 1 Cup Cashews
    • 1 Cup Shredded Mozzarella Cheese
    • 5 strips Bacon , cooked and crumbled
    • 1 Cup Grapes , sliced

    For the poppy seed dressing

    • ⅔ cup oil
    • ½ cup sugar
    • ½ cup red wine vinegar
    • 1 teaspoon dry mustard
    • ½ teaspoon poppy seeds
    • ½ teaspoon salt

    Instructions
     

    • Wash and shred red leaf lettuce and place in large bowl
    • Layer cashews, mozzarella cheese, bacon and grapes in that order on the salad

    To make dressing

    • Mix together oil, sugar, red wine vinegar, dry mustard, poppy seeds and salt
    • Put in blender and blend well
