    Cheesy goodness, these Baked Potato Slices are made with little effort and are topped with the baked potato classics: Chives, bacon and cheese. Enjoy this simple side dish recipe at any meal!

    Such a simple and easy side dish potato recipe, these Baked Potato Slices are a lot like homemade potato chips, but they are baked! They have a slight crispness to them with the added cheese and bacon, these potatoes just sing.

    The toppings are baked potato classics, the cheese and bacon with the chives. These potatoes can be dipped in sour cream, or salsa as well! If you like potatoes, we have a lot here such as Air Fryer Ranch Potatoes and Crock Pot Baked Potatoes.

    Ingredients

    • potatoes - can use Russet potatoes. I used petite gold potatoes. (More on that below.)
    • olive oil
    • sea salt
    • cheddar cheese - shredded
    • bacon bits
    • chives - dried or fresh

    What potatoes should I use?

    A Russet potato would be a good potato to use, it is sturdy and will bake will. I used a Gold potato that is petite. We LOVE these potatoes as they cook well and taste amazing. The small size of the potatoes made for great bite sized potato bites. However, that would be up to you and the size potatoes you would want. Russet potatoes would have larger slices.

    Slicing the potatoes

    Slice the potatoes thin for the best results. The potatoes will cook faster and you will get a crispier potato the thinner you slice them.

    So they are sliced thin enough for a crispy potato but not too think to see through. They will be placed on a greased baking sheet then drizzled with olive oil and sea salt. Oh yum.

    Bake

    The oven will be preheated to 400 degrees and the potatoes will be baked without the toppings on. The cheese will get too melted and crisp before the potatoes are done.

    The length of time the potatoes will need to cook is dependent on how thick you make the potatoes. About ¼ inch thick took about 17 minutes to our desired doneness. Then, they were pulled out of the oven and the toppings sprinkled on. They were placed back in the oven for about 5 minutes until the cheese was melted.

    Can I dip these potato slices in sour cream?

    Yes! Sour cream or salsa would be delicious to serve on the side.

    Can I use green onions instead of chives?

    Yes you can!

    Equipment

    • 1 baking sheet

    Ingredients

    • 10 petite potatoes I used Gold, see picture for reference.
    • ½ cup cheddar cheese shredded
    • 1 tablespoon chives dried or fresh
    • 2 tablespoons bacon bits
    • 2 teaspoon sea salt
    • olive oil

    Instructions

    • Preheat oven to 400℉.
    • Grease a baking sheet with cooking spray.
    • Thinly slice the potatoes and place on the greased baking sheet. The size of the potato slices should be ¼ - ⅓ inch. Drizzle lightly with olive oil. Sprinkle with sea salt.
    • Bake in the oven for 15-17 minutes or until desired doneness. The potatoes will start to lightly brown and have a slight crispness to them.
    • Remove the potatoes from the oven and sprinkle cheddar cheese, bacon bits and chives on top. Bake for 5 minutes or until cheese is melted.
    • Remove from oven and serve plain or with salsa or sour cream.
