Baking with apples
The apple type that one bakes with is so important. Some apples are made for eating or baking, others for sauce. I put together a list of the best apples for baking, eating and sauce in a guide. It is important to not use an applesauce apple for baking or it will get too mushy. Good baking apples are Cortland (which I used), Honeycrisp, Granny Smith (if you like a little tart) and Pink Lady.

The spices
The flour adds a little thickness to the apple mixture so the juices won't overflow the apple bites crust. I like adding a little cinnamon AND nutmeg to the apples as I feel it adds a bit more noticeable flavor. If you prefer, a dash of ginger can be used.
Pie Crust
Any type of homemade pie crust can be used. I have a great recipe for a pie crust that would work well for this recipe. If you want to use a store bought pie crust, go ahead! I would recommend a name brand and not a store brand crust. A store bought crust works well for a pie, but in this case the pie crust gets handled a bit more and I feel a name brand one works better.

To make the pie bites
You will need a circle cookie or biscuit cutter. Any size will work, it is up to you on how big you want the bites. Then cut the circles out of the pie crust.

Bake
The bites will bake at 350 degrees for about 20 minutes or until the tops turn golden brown. Before baking, be sure to poke a hole in the top to let the steam out and sprinkle with sugar because... well... my mom always did.

FAQ
Yes! They freeze great! Just make as normal, then place uncooked bites in a container or freezer bag and freeze for up to 3 months. Remove from bag, let thaw in fridge and bake as normal.
Leftovers can be kept on the counter in an airtight container or in a plastic zipped bag for up to 3 days.
I have not tried.
Tip
Use parchment paper to bake this dessert on. It will help with removing the bites so they don't stick when they are done cooking.
The crust is crisp and buttery, the apples are warm and full of cinnamon. Yes, it is a great dessert recipe for your family this Holiday season (or anytime!)
