Zesty Hamburger Dumpling Soup--it's what for supper. Lunch the next day. And maybe the next day. Gotta love efficiency, you know. ;-)
Well, as I am typing this, half of my family is at Sunday evening church while I am home with a sick child and our youngest. I have the sermon playing in the background (it is a music night, so I am typing with fabulous piano music serenading me. Talk about inspiring!
This zesty hamburger dumpling soup is great to serve a sick child or to take to a family who needs a meal. {Think Proverbs 31 Woman!} The beef broth flavor with a touch of zest from the diced tomatoes is so comforting on a cold day or if you have a cold! What is great about this soup is you can add whatever touches you want to it to make it your own. I added carrots and corn. You can add Lima beans and peas if you want. Why not, right?
Well, my family may refuse to eat it, but maybe it would work for yours. :-)

Make this soup in the crock pot or on the stove top. Add more tomatoes for a greater kick. Add regular diced tomatoes for less of a kick. You know, you could add sausage instead of hamburger but the heat factor may be a bit much for younger ones. Ryan would love it as would my husband.

Put this hamburger recipe together with little prep. As I say often, be sure to fry up your hamburger as soon as you get home from the store. Then put it into containers and label it (ie: 1 lb, taco meat, for soup, etc...) It will make meal prep so easy!

Zesty Hamburger Dumpling Soup

- 2 cans beef broth
- 2 cups water
- 1 ¼ lb hamburger , cooked
- 1 cup corn
- 1 can tomatoes with chili's
- 1 6 oz can tomato sauce
- 1 cup chopped carrots
- 1 bag Reames dumplings
Instructions
- Add all ingredients except dumplings into a crock pot and cook on low for 6 hours-7 hours or high for 4 hours
- minutes before eating, add dumplings and stir soup
- Enjoy with crackers, cheese or bread
