    A fun and easy ice cream dessert recipe, this Brownie Pretzel Ice Cream Cake has layers of chocolate, brownie ice cream and pretzels. It doesn't get much better or easier than that!

    Creamy, salty and sweet, this ice cream recipe only has three ingredients! It doesn't take too long to freeze either so you can make it in the morning and it is ready to go by mid-afternoon. The chocolate and pretzels compliment each other as chocolate and salt are always a good thing, like with this salted chocolate caramel candy.

    Ingredients

    • Triple Brownie Ice Cream - other brownie ice cream will work. I got this from Kroger
    • Pretzels - crushed and broken
    • Chocolate Ice Cream Topping - any brand will work

    I used Hershey syrup which works great. However, ice cream topping like the kind that hardens into a shell would work great for this as well.

    How to make Brownie Pretzel Ice Cream Cake

    With only three ingredients, the process is so simple.

    It is very important to line the loaf pan with wax paper so the ice cream cake can be lifted out easily. The pretzels will go directly on the wax paper to start the layers.

    The pretzels need to be crushed and broken up. It is best to use a little of both (not just crushed pieces and not just large broken pieces). It gives a great base for the ice cream.

    Layers

    Simply layer the pretzels, half of the ice cream, chocolate sauce, pretzels, ice cream and pretzels. That is it! I recommend this order as you don't want the pretzels to be topped with the chocolate or it might seep through.

    Freezing time

    This ice cream recipe needs to be frozen for at least 4 hours. Overnight would be best, but if you are in a pinch, 4 hours works fine. Be sure to return the ice cream cake to the freezer so it won't melt.

    Storage

    It can be stored in the freezer, wrapped with plastic wrap or in a freezer safe container for up to 5 days.

    Can I use any type of ice cream?

    Yes you can! In fact, changing it up will bring a whole different dessert, every time.

    Can I add caramel?

    Adding caramel with the chocolate or in place of the chocolate would be delicious.

    Can I use gluten free pretzels?

    Yes you can!

    Equipment

    • 1 loaf pan

    Ingredients

    • 1.5 qt Triple Brownie Ice Cream
    • ½ cup chocolate ice cream topping
    • 2 cups pretzels crushed and broken

    Instructions

    • Line a loaf pan with wax paper.
    • Spread crushed pretzels on the bottom of the wax paper, about ½ cup. Enough so there is a layer of pretzels covering the bottom of the pan.
    • Using half of the softened ice cream, spread carefully on top of the pretzels.
    • Spread the ice cream topping on top of the ice cream.
    • Add another layer of pretzels on top of the ice cream so the ice cream is covered.
    • Carefully spread the rest of the ice cream on top of the pretzels.
    • Top with the remaining pretzels until the ice cream is covered.
    • Freeze for four hours or overnight.
    • Slice and serve.

    Notes

    Make sure the ice cream is softened so it is easy to spread. The ice cream can be left out on the counter for about 10 minutes before starting this recipe.
