    Spinach Strawberry Salad

    A salad worthy of lunch or dinner. This Spinach Strawberry Salad with a balsamic vinaigrette dressing has all the right ingredients. Strawberries and spinach are meant for each other combined with the tang of the vinaigrette that make this salad sing.

    The blend of flavors in the Spinach Strawberry Salad are just perfection. The Feta cheese, walnuts and strawberries come together paired with the spinach and it is salad extraordinaire.

    The topping is a balsamic vinaigrette and couldn't work any better. The dressing is a classic one that can go on many salads but on this spinach salad it works the best. I think it is the touch of garlic and mustard in the dressing that works well with the ingredients of the salad.

    Ingredients

    • baby spinach - can use regular spinach, but I feel baby spinach works better
    • strawberries - cut and stems removed
    • walnuts - can used candied walnuts (so good!)
    • feta cheese
    • bacon bits

    Using fresh ingredients

    It is always so delicious and great to use fresh ingredients in a salad if possible. In the winter, it is harder, but to get fresh spinach and strawberries from a garden really brings the salad up a notch. Try farmer's markets if you don't have the space to grow a garden yourself. Also, look into produce swaps or co-ops in your local area.

    Putting the salad together

    The salad is a layer of goodness. It comes together like any salad, the spinach first, than the toppings. The walnuts can be chopped plain, or candied. The candied walnuts do add a sweetness to the salad that is nice touch.

    The dressing can be made up ahead of time or when you make the salad. Here is more information on the balsamic vinaigrette. It is the perfect dressing for this salad.

    Leftovers

    The salad is best if eaten the same day it is made, especially if you put the salad dressing on it already. However, if you do all the preparation work first and keep all the ingredients separate then combine it all when ready to serve, the salad will come together quickly.

    Can use another salad dressing for this?

    The vinaigrette is the best for this salad, but you could also try a poppyseed dressing as well.

    Can I add blueberries as well as the strawberries?

    Yum! Yes!

    How long does the dressing last in the fridge?

    Up to a week after making it, in a covered container.

    Ingredients

    • 4-5 cups baby spinach
    • ½ cup bacon bits
    • 1 ½ cup strawberries stems removed and sliced
    • ½ cup walnuts candied, if preferred
    • ½ cup Feta cheese

    Dressing

    • 2 T honey
    • ¼ cup balsamic vinaigrette
    • 1 T mustard powder
    • ½ teaspoon sea salt
    • ½ teaspoon ground pepper
    • ¾ cup olive oil
    • 2 teaspoon garlic powder

    Instructions

    • Wash the spinach.
    • Layer the spinach, bacon, walnuts, feta cheese, strawberries in a serving bowl or on individual plates.
    • Mix all dressing ingredients in a blender.
    • Spread the dressing on the salad. Serve.
