Pop Tarts a definitely a favorite around our house so making these Homemade Brown Sugar Pop Tarts is something I knew I wanted to try. After all, I know all ingredients that go into this breakfast treat, so it makes a mom heart happy.
The outside is a pie crust and the inside is a combination of brown sugar, cinnamon and a little bit of flour. The frosting on top is a bit of cinnamon and powdered sugar for a creamy frosting mixture. These homemade Pop Tarts are not only great for breakfast but for lunch boxes too! How to make Homemade Brown Sugar Pop Tarts
The process of making these Pop Tarts are so simple when using store bought pie crust. Take the pie crust and lay it out on parchment paper so it can be transferred easily to a baking sheet.
As you can see, I didn't put it on parchment paper. That is why I suggested it for you. It will make the rolling out process so much easier!
This recipe will need two packages of pie crusts. Two will be for the bottom and two for the top. They will overlap slightly.
Now, you can trim the edges so you are working with a rectangle. Or, you can keep the circle-ish shape so there is no waste. Completely up to you. Rolling the pie crusts with a rolling pie helps the shape as well.
Hint: This baking sheet is perfect for these Homemade Pop Tarts because there is not an edge.
The filling
Let's be real, the best part of any Pop Tart is the filling, right? This filling is made with brown sugar and cinnamon. It has a little bit of flour in it as well to help everything to hold together.
Be sure to use a fork to mix everything together and to break up any clumps. A little filling mixture or a lot of mixture, it is up to you!
I had some less than pretty ones due to the overlapping, but my kids will all of them. Be sure to pinch the edges of the crust to keep the filling in.
Substitutions
- If you would rather have a fruit filling, try this Blueberry Sauce or this Strawberry Sauce.
- A homemade pie crust would work well, plus you could shape the crust into a rectangle from the start.
- If you are dairy free, margarine can be used.
Storage
Store the cooked Homemade Brown Sugar Pop Tarts in an airtight container. They can be kept on the counter, however to keep them longer, they can be refrigerated for up to 4 days.
Top Tip
Be sure not overcook the Pop Tarts. You want them to remain soft yet hold together well. Crispness is not what this recipe is looking for.

Homemade Brown Sugar Pop Tarts

Ingredients
- 2 store bought pie crusts 4 total crusts
- 1 cup light brown sugar
- ¼ cup all purpose flour
- 1 tablespoon cinnamon
For The Frosting
- 1 cup powdered sugar
- 1 teaspoon cinnamon
- 3 Tablespoon butter melted
- 2 teaspoon water
Instructions
- Preheat oven to 350℉.
- Place two of the store bought pie crusts on a piece of parchment paper.
- Make a rectangle (or as close as you can) with the pie crusts, overlapping if necessary and using a rolling pin.
- In a small bowl, mix together the brown sugar, cinnamon and flour mixture.
- Spread the brown sugar mixture on the pie crusts.
- Cover the brown sugar mixture with the remaining two pie crusts.
- Trim the sides of the pastry with a dough cutter if desired to make it clean and shaped like a rectangle.
- Bake for 20 minutes or until Pop Tarts are lightly brown and dough is cooked.
For The Frosting
- Whisk together the powdered sugar, cinnamon, butter and water in bowl.
- Add more powdered sugar if desired for thicker consistency.
- When Pop Tarts have cooled, spread on top of the Pop Tarts and let the frosting set up.
- Serve.
Notes
- Nutrition facts do not include pie crusts.
- If desired, before spreading the brown sugar mixture on the pie crusts, spread butter on top of the pie crusts, then the brown sugar mixture.
