The other day, while "Krogering", I came across some fabulous, wonderful baking deals. You can see it on my Instagram page. One would guess they were cleaning out their Christmas baking stash. When a store cleans off their shelves, we win, don't we?
In the pile of goods I was blessed to find, were two bars of Ghirardelli Chocolate baking bars. These baking bars make great cookie bars such as the Ghirardelli Chocolate Chuck Cookie Bars. the chocolate is rich and flavorful and the taste is real and defined. The cookie bars themselves are soft and chewy.

To make these soft and gooey chocolate cookie bars, you will also need a 9x13 pan. These bars are baked in a pan instead of a cookie sheet. Also, if desired, a skillet cookie can be made from this recipe.
Using the chocolate bars
There are couple options for the chocolate bars. They can either be chopped into small pieces (hence the "chunks") or grated and added to the batter. If you like more chocolate in every bite, I would recommend the chunks.
Mixing the dough
The dough is mixed together in a large bowl, then the chocolate is folded in. Don't over stir, but be sure the ingredients are mixed well.
Bake
To bake these bars, they need to be baked in a greased 9x13 pan. However, if you want to line the pan with foil for easier removal of the bars, that works. Be sure to lightly spray the foil as well. They will be baked at 375 degrees for 20-25 minutes or until the cookies are firm and a toothpick tests clean.
Storage
Store the leftover cookie bars in an airtight container on the counter out of direct sunlight. These bars can also be cut and placed in a freezer container for up to 2 months. These are perfect to pull one out for a lunch box, they are thawed and ready to eat by lunch!
