Easy Cucumber Salad
Easy salad recipe with cucumbers, green peppers and onions sitting in a vinegar/sugar dressing. Great and easy to put together salad.

Ingredients

cucumbers
about 3 medium
¾
cup
yellow onion
chopped
½
cup
green peppers
chopped

coarse salt

white sugar

olive oil
⅔
cup
white vinegar
Instructions
Mix chopped vegetables in a medium serving bowl
Put salt over vegetables and stir, set aside
Put sugar, olive oil and vinegar in a blender and mix well
Pour over vegetables and stir
Cover the bowl and place in refrigerator at least 5 hours
Serve. Refrigerated leftovers (be sure it is covered)
Salad will be best 24-36 hours after making it
