Ingredients
- orange juice - concentrate
- peaches - I use 100% juice
- bananas
- pineapple - crushed
- sugar
- maraschino cherries
- lemon juice
The sliced peaches and crushed pineapple are in 100% juice. The peach juice will be reserved for for later.
The cherries may have to have the stems taken off. You can also cut the cherries in half, if desired. I did not cut the cherries in half.
Reserving the juice
The juice needs to be reserved from the peaches but not the pineapple. The pineapple juice will go into the fruit salad with the pineapple.
To drain the peach juice, I preferred to put it into a measuring cup. You will want about 2 cups of juice, adding as much water as necessary to get to two cups. The sugar will be stirred into the peach juice mixture as well.
Orange juice concentrate
I used pulp free orange juice concentrate, but that is up to you. The frozen orange juice concentrate will need to be thawed enough to pour over the fruit and stirred in easily.
The lemon juice is simply to help the bananas not to turn brown and also to counter some of the sweet. You could also add lime juice instead of lemon juice.
Mixing together the frozen fruit salad
To make this fruit recipe, drain the juices from the peaches and set the juice aside. Then, cut the peaches into chunks and add to a large freezer safe bowl. Add in the bananas, pineapple and cherries.
The orange juice and peach juice with lemon juice will be stirred in.
Freezing the fruit
The bowl with the fruit in it will be placed in the freezer for 8 hours or overnight. Then 1-2 hours before serving, pull the fruit out of the freezer and let start to thaw.
The fruit will get slushy and delicious!
Alternatives
I like putting the fruit in a big bowl and freezing it that way. Then after it thaws a little, put it in cups to serve. Alternatively, you can place the fruit mixture in cups, then freeze. When ready to serve, the fruit will take less time to thaw. However, you do need a little more space in the freezer.
