I don't know what the weather is like in your area of the world, but at my house, we have hit fall. Fall weather, fall colors and fall flavors. With fall, of course, comes cooler temperatures. Cooler temperatures means soup weather.

I enjoy a great, warm bowl of soup. Especially one I can put in my crock pot, it cooks all day then it is ready for supper when you are. This easy crock pot sausage soup checks all of those boxes.

Ingredients
A lot of my recipes on Baking With Mom, have only a handful of ingredients or the ingredients don't require a lot of preparation work. (Like Taco Soup)
That isn't the case with this soup. You will want to plan a little in advance because some of the vegetables require cutting and the sausage needs to be cooked ahead of time.
- Italian ground sausage
- onion
- garlic (or garlic powder)
- vegetable broth
- diced tomatoes
- carrots
- celery
- potatoes
- Ditalini pasta
- thyme
- basil
- bay leaf
- parsley flakes
Italian sausage
The Italian sausage you choose is up to you. I do recommend ground sausage and not links. I thought this article explaining the different types of sausage was a good one.
The sausage will need to be cooked before you put in the crock pot. Do not throw it in with the other ingredients and hope for the best. For your safety, cook the sausage completely on the stove first.
Can I prepare anything ahead of time?
Yes! If you want to make this soup in the morning before you head out the door, you can cook the sausage ahead of time. You can also cut the veggies ahead of time and put them in the freezer.
Then when it is time to add all the ingredients the morning of, the hard part is done!
Instructions
For starters, you will want to brown the sausage and cook it completely. It should no longer be pink in the middle. While that is cooking, you can chop the carrots, celery and onions. You can also peel and chop the potatoes.
After everything is chopped, add all ingredients to the crock pot, except for the pasta. The pasta you will want to add during the last 30-45 minutes of cooking.
Cooking Time
You will want to cook on low for 8 hours or on high for 5-6. As stated above, add the pasta with only about 30-45 minutes to go before you eat.
Be sure to stir every 15 minutes.
Storage
After you enjoy this soup, if you have some leftovers, you will want to put them in an airtight container and store it in the refrigerator for no more than 3 days.
Reheat
To reheat this soup on the stove top, place in a saucepan and warm it on medium heat, stirring occasionally until warmed through.
To reheat this soup in the microwave, place in a microwave safe bowl. Be sure to loosely cover the bowl. By loosely, I mean to place a paper towel over the top of the bowl so the soup can still "breathe" but the soup doesn't splatter everywhere.
If the soup can not breathe, you will have soup everywhere in your microwave. If you don't cover it, you will have soup everywhere in the microwave. Just cover it with a paper towel and don't have soup splatters.
Microwave it for 45 seconds on high then stir. Then add time as needed.

Easy Crock Pot Sausage Soup
Ingredients
- 1 lb Italian ground sausage
- ½ cup white onion chopped
- 1 Tablespoon garlic powder
- 4 cups vegetable broth
- 14.5 oz petite diced tomatoes
- 3 medium carrots peeled and chopped
- 2 stalks celery chopped
- 2 large potatoes peeled and chopped
- ¼ teaspoon thyme
- ¼ teaspoon basil
- 1 bay leaf
- 1 teaspoon parsley
- 1 teaspoon salt
- 1 teaspoon pepper
- ½ cup Ditalini pasta
Instructions
- Cook sausage in a large frying pan until no longer pink
- Meanwhile, wash and chop vegetables
- Add all ingredients to the crock pot except the pasta
- Cook on low for 8 hours or on high for 5-6 hours
- Add pasta 30-45 minutes before you are ready to eat. After adding pasta, stir every 15 minutes
