    Cornflake Candy

    A classic Cornflake Candy with a new twist to the old. Made with peanut butter, butterscotch chips and marshmallow cream, this candy is perfect for Christmas candy trays or anytime!

    This old fashioned Cornflake Candy is the treat from yesteryear that will help you remember Christmas' past. The candy is simple to make with only a few ingredients. The flavor blends perfectly to make a crunchy fun candy.

    Ingredients

    • cornflakes - any brand will work
    • peanut butter - creamy only
    • marshmallow cream - I recommend Kraft
    • butterscotch chips - any brand is fine
    peanut butter, marshmallow cream and butterscotch chips.

    Melting the ingredients

    The ingredients (besides the cornflakes) are added to a bowl and microwaved until melted.

    This is such a fun recipe to take to Christmas parties or to add to candy tins as gifts. It comes together in minutes and is ready to eat in no time!

    Tip

    It is important to melt the ingredients in small bursts. Such as 45 seconds to start, then another 25 seconds, etc. The mixture will need to be stirred between each melting.

    FAQ

    Can I use crunchy peanut butter?

    If that is all you have, yes. But for the best results, use creamy peanut butter.

    Do I have to use the marshmallow cream?

    No you don't, but it seems to add a a lightness to it that I feel is important. It also has a distinct flavor that adds to the Cornflake Candy.

    Can I add mini M&M's to the candy?

    Yes! That would be fun and delicious!

    Setting up the Cornflake Candy

    The candy needs to set up on parchment paper or waxed paper for about 30 minutes to harden, after you form the mixture into balls. The candy can be placed in the refrigerator to set up or on the counter will work too. Make sure the candy is not in direct sunlight.

    • Chopped peanuts

    Storage

    The candy can be stored on the counter out of direct sunlight in a container. To remained chilled, the refrigerator will keep them nice and cold.

    This Christmas Candy is loaded with peanut butter, marshmallow cream and peanut butter. Delicious and easy to make!

    Equipment

    • 1 mixing bowl
    • parchment paper or waxed paper

    Ingredients

    • 4 cups cornflakes
    • ¼ cup marshmallow cream
    • 12 oz butterscotch chips
    • ½ cup creamy peanut butter

    Instructions

    • In a medium microwave safe bowl, add butterscotch chips, peanut butter and marshmallow cream. Melt for 45 seconds, then stir.
    • Melt again for 25 seconds, if necessary for all to be melted together. Stir well. Add more time if necessary.
    • Add cornflakes to a large bowl. Pour peanut butter mixture over top of the cornflakes.
    • Mix well until cornflakes are coated.
    • Using a scoop or a spoon, scoop cornflake candy out onto parchment or wax paper and let harden. If desired, sprinkle Christmas sprinkles on top of candy after you place on paper.
    • After hardened, serve.
