Too many blueberries?
Usually, I fall in the camp of adding plenty of blueberries, like in blueberry muffins. However, be sure to add only the 1 cup of blueberries for this cookie recipe as the blueberries will overpower the cookie and make it too moist. The cookie still needs to be able to be picked up.
Frosting or no frosting
The frosting isn't necessary, but it adds such a great flavor to this special blueberry cookie. I do recommend it, but I would still serve the cookie without the frosting. A cream cheese frosting would be great too.
How to make the blueberry cookies
The cookie dough for the cookies is a simple cookie recipe. In fact, it makes up like a normal cookie, with wet ingredients getting mixed together then adding in the dry ingredients.
Be sure to fold in the blueberries carefully. Blueberries can crush easily and while a blue cookie may look pretty, the whole blueberries would be best in this recipe.
After the batter is made, scoop the cookies on a cookie sheet. You can use a baking sheet or just put them on the cookie sheet. No baking spray is needed.
Bake
Bake the cookies at 350 degrees for about 10 minutes. The cookies will need to start to firm and turn a light golden brown.
Let the cookies cool completely on a baking sheet then drizzle the frosting on top.
Storage
The cookies need to be stored in an airtight container on the counter for up to three days.

Blueberry Cookies
Equipment
- 1 1 inch cookie scoop
Ingredients
- ½ cup butter softened
- ¾ cup packed brown sugar
- 1 egg
- 2 teaspoon vanilla
- 1 ¼ cup all purpose flour
- ¼ cup old fashioned oats
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ teaspoon cinnamon
- 1 cup blueberries fresh, washed
For The Frosting
- 2 tablespoons butter melted
- ¾ cup powdered sugar
- 2 tablespoon water
Instructions
- Preheat oven to 350℉.
- Cream together the butter and brown sugar in a large mixing bowl.
- Mix in the egg and vanilla.
- Stir in the flour, oats, baking soda, salt and cinnamon until ingredients are mixed together well.
- Fold in blueberries.
- Using a cookie scoop, scoop out dough and place on cookies sheets.
- Bake for 8-12 minutes or until cookies are starting to firm and are turning golden brown.
- Let cookies cool for 3 minutes on the pan then transfer to a cooling rack to cool completely.
For The Frosting
- Whisk together the melted butter, water and powdered sugar in a small bowl. Drizzle over cooled cookies.
- Let the frosting harden and serve.
